Pineapple Bread Pudding

This excellent bread pudding is like a cross between a chess pie and a pineapple upside-down coffee cake
- 2 cups sugar
- 3 beaten eggs
- 1/2 cup cream or milk
- 1 teaspoon vanilla
- 1/2 cup melted butter
- 4 cups crustless bread, cubed
- 1 small can crushed pineapple,
- drained of juice
- ( may also use
- chunked or sliced pineapple )
Barbeque Baked Country Ribs

Preheat oven to 350 degrees
- rub ingredients :
- 2 to 2 1/2 pounds country-style pork ribs
- 1/4 teaspoon garlic powder
- 1/2 teaspoon onion powder
- tin foil
- spray oil
- 1 large onion, sliced
- 1/2 cup barbeque sauce
Irish Bread & Butter Pudding

- 1/4 cup sugar
- 1 teaspoon cinnamon
- 5 slices white bread
- 4-6 Tablespoons soft butter
- 1/2 cup golden raisins
- 2 cups milk
- 2 eggs
- cream for sauce or
- whipped cream for garnish
Classic Banana Walnut Bread

Preheat oven to 375 degrees
- 1 cup sugar
- 1 stick soft butter
- 2 eggs
- 3 mashed bananas
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup chopped walnuts
Thai Salad

This is a 285 calorie Atkins recipe
- dressing :
- 1 head of Boston lettuce,
- torn into bite-size pieces
- 1/2 cup chopped cilantro
- 1/2 cup chopped mint leaves
- 2-3 peeled and shredded carrots
- 3 green onions, cut into 1 inch diagonal pieces
- 1/4 cup lime juice
- 2 Tablespoons fish sauce
- 2 Tablespoons olive oil
- 1 seeded and minced jalapeno
- 1 Tablespoon grated or minced ginger
- 1 teaspoon sugar ( optional )
- 12 ounces cooked boneless skinless chicken breasts, cut into thin strips
White Chocolate Apricot Oatmeal Cookies

These cookies are a big hit with kids as well as adults
- 1 1/2 sticks soft butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 cup flour
- 1 teaspoon baking soda
- 2 1/2 cups oats
- 10 ounce package white chocolate chips
- 1/4 cup chopped dried apricots
Peach Orange Smoothie

Combine all ingredients in a blender and puree until smooth
- 1/2 cup milk
- juice and pulp of 1 orange
- 6 ounce container peach yogurt
- 1 can sliced peaches, drained of juice
- 6 crushed ice cubes
Fettucine with Orange, Mint, & Parmesan Sauce

Put fettucine on to boil. In a saucepan, at medium-high, melt the butter
- 16 ounces fettucine
- 6 Tablespoons butter
- 2 Tablespoons finely chopped orange zest
- 1 Tablespoon shredded fresh mint leaves
- salt & pepper to taste
- 1/2 cup orange juice
- 1/2 cup grated parmigiano ( Parmesan ) cheese
Coffee Banana Smoothie

Combine all ingredients in a blender, and puree until smooth
- 1 cup cold coffee
- 1 sliced banana
- 1/2 cup frozen vanilla yogurt
- or ice cream
