Slow Cooker Caponata

Place all ingredients ( except the bread or pita chips ) in the slow cooker
- 1 pound eggplant, peeled, cut into 1/2 inch cubes
- 14 ounce can diced tomatoes
- 1 medium red bell pepper, cut into 1/2 inch pieces
- 3/4 cup salsa
- 1/4 cup olive oil
- 3 Tablespoons balsamic vinegar
- 3 cloves garlic, peeled and minced
- 1 1/4 teaspoon dried oregano
- 1/3 cup fresh basil, chopped
- toasted French bread slices or pita chips
Crock Pot Beef Roast

- beef chuck roast about 2-3 pounds in weight
- liquid smoke or Worcestershire sauce
- flour for dredging
- shortening for browning
- medium or large onion, peeled and quartered
- 1-2 cups beef broth
- potatoes and carrots, peeled and chunked
Guacamole

Mix all ingredients together
- 4 mashed ripe avocadoes
- 1 teaspoon cumin
- 1/2 cup minced onion
- 4 teaspoons lime juice
- 1/4 cup chopped cilantro
- 1-2 minced chiles
White Chili

In a large saute pan, heat olive oil at medium
- 1 Tablespoon olive oil
- 1 1/2 cup coarsely chopped onion
- 2 cloves minced garlic
- 1 minced jalapeno
- 4 ounce can chopped green chiles, drained
- 1 teaspoon cumin
- 1/2 teaspoon oregano
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon salt
- 1 cup chicken broth
- 19 ounce can cannellini beans, drained
- 2 cups cubed cooked turkey or chicken
- 1/4 cup chopped cilantro
- 1/2 cup shredded Monterey Jack cheese
Cheddar Cheese Soup

Saute the onion, carrot, green pepper, and celery in the butter
- 2 Tablespoons butter
- 1 small finely chopped onion
- 1 shredded carrot
- 1/4 cup chopped green pepper
- 1/4 cup chopped celery
- 3 Tablespoons flour
- 5 cups chicken broth
- 2 cups shredded Cheddar cheese
- 1 cup milk
- salt and pepper to taste
Southwestern Pumpkin Soup

Bring the broth and cream to a boil in a heavy pot over medium-high heat
- 2 ( 15 oz ) cans chicken broth
- 1 cup heavy ( whipping ) cream
- 1 ( 15 oz ) can pumpkin
- 3 Tablespoons brown sugar
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon coriander
- 1/8 teaspoon nutmeg
- shredded cheddar cheese
- and chopped cilantro for garnish,
- if desired
Wagon Boss Chili

In a dutch oven, heat the oil at medium high
- 2 Tablespoons peanut or canola oil
- 2 pounds round steak,
- cut into 1/2" cubes
- 1 cup chopped onion
- 3 cloves minced garlic
- 1 cup water
- 15 ounce can beef broth
- 15 ounce can chopped tomatoes
- 1 teaspoon cumin
- 1 teaspoon cayenne pepper
- 2 teaspoons chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 15 ounce can pinto or kidney beans, rinsed
- 3 Tablespoons cornmeal
Best Chocolate Chip Cookies

Preheat oven to 375 degrees
- 2 cups flour
- 1 1/2 teaspoons salt
- 1 teaspoon baking soda
- 1 1/2 sticks soft butter
- 1/2 cup sugar
- 3/4 cup brown sugar
- 2 eggs
- 2 teaspoons vanilla
- 1 package chocloate chips
- 1 cup chopped nuts ( optional )
Fast and Easy Spicy Succotash

Saute the onion until tender in some of the reserved bacon grease
- 1/4 pound diced bacon, crisp fried and drained,
- grease reserved
- 1 cup finely-chopped onion
- 2 teaspoons cayenne pepper
- 15 ounce can of corn
- or 1 small package cooked frozen corn
- 15 ounce can drained lima beans or
- 1 small package cooked frozen lima beans
Cowboy Caviar

- drained and rinsed
- 4 ounce can chopped black olives, drained
- 1/4 cup finely chopped onion

- 2 Tablespoons vegetable oil
- 2 Tablespoons lime juice
- 1/4 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/8 teaspoon black pepper
- 8 ounces soft cream cheese
- 2 hard-cooked chopped eggs
- 2 sliced green onions
