Sweet Potato Pudding

This is a classic Thanksgiving dish
- 2 eggs
- 1/2 cup sugar
- 1/4 teaspoon each of mace, ginger,
- and cinnamon
- 1 teaspoon vanilla
- 1 1/2 cup peeled and grated sweet potatoes
- 1/4 cup melted butter
- 1 cup milk
Zucchini Bread

Nice enough to function as a cake
- 3 eggs
- 1 1/2 cups sugar
- 2 teaspoons vanilla
- 1 cup vegetable oil
- 2 cups peeled and shredded zucchini
- 8 ounce can crushed pineapple, drained
- 3 cups flour
- 1/2 teaspoon baking powder
- 2 teaspoons baking soda
- 1 1/2 teaspoons cinnamon
- 3/4 cup chopped pecans
3 Bean Salad

Place vegetables in a bowl, sprinkle with salt, and let stand for a few minutes
- Cabbage & Peas 3 Bean Salad variation :
- 16 ounce can each of green beans,
- yellow wax beans, and kidney beans
- 1/2 cup diced green bell pepper
- 4-5 green onions, finely chopped
- 1 teaspoon each of salt & black pepper
- 1/2 cup sugar
- 2/3 cup vinegar
- 2 Tablespoons vegetable oil
- 1 Tablespoon olive oil
- beans as per above
- 1 can green peas, drained
- large red onion, finely chopped
- 2 cups shredded cabbage
- small jar chopped pimentos
- 1/2 cup vegetable oil
- 1/2 cup vinegar
- 3/4 cup brown sugar
- 1 teaspoon salt
Cauliflower Cheese Soup

Saute the green onions in the olive oil until tender, about 3 minutes
- 1 cup chopped green onion
- 1 Tablespoon olive oil
- 3 cups chicken broth
- 1 pound caulfilfower flowerets
- 1/4 cup flour
- 1 1/2 cups shreddded
- Monterey Jack cheese
- a jar of roasted red bell peppers, coarsely chopped
Chicken & Zucchini in Peanut Sauce Stir Fry

Mix the sauce in a small bowl : the soy sauce, sherry, and peanut butter
- 2 Tablespoons peanut oil
- 1 large boneless skinless chicken breast,
- cut across the grain in thin strips
- 2 about 2 inches long each
- 4 Tablespoons soy sauce
- 4 Tablespoons sherry
- 3 Tablespoons crunchy style peanut butter
- 4 medium-sized zucchini,
- cut into 2 inch lengths,
- then into 1/4 inch thick sticks
- 4-6 diagonally-sliced green onions
- 8 ounce can of sliced bamboo shoots, drained
- optional garnish : toasted coconut
- serve over cooked rice
Fancy 3 Bean Salad

A snazzy colorful potluck contribution
- Dressing :
- 1/2 cup each of cooked chickpeas, black beans, and kidney beans
- 2 chopped green onions
- 1 finely chopped shallot
- 1 medium-sized diced green pepper
- 12 halved cherry tomatoes
- 1 clove minced garlic
- 1 Tablespoon dijon mustard
- 3 Tablespoons red wine vinegar
- 1/8 teaspoon cayenne pepper
- 7 Tablespoons olive oil
- juice of 1 lemon
Raw Zucchini Salad

This is a variation on a Martha Stewart recipe
- 1 medium zucchini, finely diced in 1/4 inch cubes
- 3/4 cup crumbled Feta cheese
- 3 Tablespoons olive oil
- 3 Tablespoons snipped fresh dill sprigs
- juice and zest of 1 large lemon
- sea salt and black pepper to taste
Peanut Butter Applesauce Cake

This is a very rich moist bar-like cake
- 1/4 cup soft butter
- 1 cup sugar
- 1/2 cup creamy peanut butter
- 1 egg
- 1 1/4 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cloves ( optional )
- 1 cup chunky applesauce
Best Ever Wild Rice

- 2 cups uncooked wild rice
- water as needed
Penne with Sausage

Saute onion in butter at medium-low heat
- 3 Tablespoons butter
- 2 cups yellow onions,
- thinly sliced lengthwise
- 8 ounces pork breakfast sausage
- 1 pound penne pasta, cooked
- 1 1/2 pounds coarsely chopped tomatoes ( or a 15 ounce can diced tomatoes )
- 12-15 fresh basil leaves,
- coarsely chopped
