Sauerkraut Applesauce Sausage Beer Casserole

Place ingredients in a slow-cooker in the order listed
- 24 ounce can of sauerkraut
- 8 ounce jar of applesauce
- 2 pounds Kielbasa sausage
- 12 ounce bottle of beer
Italian Round Steak

I use a porcelain-clad cast-iron covered casserole dish
- 2 pounds of round steak cut thin
- 2 Tablespoons olive oil
- 1 white onion, cut in thin rings
- 1 red pepper, cut in 1/2 inch strips
- 3 sliced celery stalks
- 1 clove minced garlic
- 1/2 cup red wine
- 1 bay leaf
- 1 can stewed tomatoes, chopped
- 1 Tablespoon worcestershire sauce
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
Beef Stew with Cannellini and Sage

This stew is especially good thickened with cornbread
- 2 Tablespoons butter
- 1 Tablespoon vegetable oil
- 1 3/4 pounds beef chuck roast
- cut into 1 inch cubes
- 1 cup thin crosswise sliced yellow onion
- 2 Tablespoons shredded fresh sage leaves
- 2 Tablespoons dry white wine
- 1 can beef broth
- 1 Tablespoon tomato paste
- 1 1/2 cups cooked cannellini beans
- or 1 can, drained
Curried Chicken and Apple Sandwiches

Combine the dressing ingredients, then combine the salad ingredients, and toss together
- dressing :
- 1/4 cup mayonnaise
- 1/4 cup plain yogurt
- 1 teaspoon curry powder
- 1/8 teaspoon sea salt
- 1/4 teaspoon cayenne pepper
- 1 clove minced garlic
- salad :
- 2 cups cooked chicken or turkey,
- cut into bite sized pieces
- 5 green onions, chopped
- 1 red or green bell pepper, chopped
- 1 small Red or Gold Delicious apple, chopped
- 2 Tablespoons minced cilantro
- pita halves and lettuce, as desired
Beef Borguignon

- 2 Tablespoons olive oil
- 6 ounces chopped bacon
- 3 pounds stew meat cut into 1-2 inch pieces
- 2 sliced carrots
- 2 chopped yellow onions
- 2 cloves minced garlic
- 3 Tablespoons flour
- 3 cups red wine
- 1-2 cups beef stock
- 1/4 teaspoon black pepper
- 1 teaspoon salt
- 3 bay leaves
- 1 teaspoon dried thyme
- 1 1/2 Tablespoons butter
- 12 oz pearl onions
- 1 1/2 Tablespoons butter
- 4 1/2 cups chopped mushrooms
Cast Iron Skillet Banana Bread

Preheat oven to 350 degrees
- 1 stick soft butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 eggs
- 3 overly-ripe mashed bananas
- 1/2 teaspoon vanilla
- 2 cups flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 cup chopped pecans
- 1/4 cup sour cream
Pozole or Mexican Chicken Soup

Preheat oven to 450 degrees
- 3 ( 6 inch ) corn tortillas,
- cut into 1/4 inch wide strips
- cooking oil spray
- 1 large chopped onion
- 1 Tablespoon minced garlic
- 1 Tablespoon oregano
- 1 1/2 teaspoons cumin
- 2 ( 15 ounce ) cans chicken broth,
- plus water to equal 5 cups
- 1 pound boneless skinless chicken breasts,
- cut into 1/2 inch cubes
- 2 ( 15 ounce ) cans yellow hominy, drained
- 4 ounce can green chiles, drained
- 1 chopped red or green bell pepper
- 2 1/2 ounce can sliced black olives
- 1/2 cup chopped cilantro
- As an alternative to using chicken, this recipe can be made using 1/2 pound lean pork, cut into 1 inch cubes.
Baked Blackberry Custard

- 3/4 cup milk
- 3 eggs
- 1/2 cup sugar
- 1/4 teaspoon sea salt
- 1/2 teaspoon vanilla
- 4 Tablespoons melted butter
- 2 cups blackberries
- 1 Tablespoon sugar
Green Tomato Pickles

Layer the tomatoes and onions on the rimmed cookie sheet, and shake salt over them
- 40 small green tomatoes such as Roma
- 4 cups white onion, thinly sliced
- salt
- plastic wrap
- a rimmed cookie sheet
- a colander
- 4 cups sugar
- 3 1/2 cups white vinegar, at least 5% acidity
- 1/2 cup white wine vinegar
- 1/2 cup water
- 2 Tablespoons celery seeds
- 1 bay leaf
- 1 1/2 teaspoons ground mustard
- 3/4 ounce ( 2 Tablespoons ) yellow mustard seeds
- 8 pint-sized sterilized Mason jars and lids
- water-bath canning kettle and rack
