Berry Blue Cheese Spread

Place blue berries in small bowl and pour boiling water over
- 1/2 cup dried blueberries
- 1 cup boiling water
- 1 pkg cream cheese, room temp
- 6 oz blue cheese, coarsley crumbled
- 2 green onions, chopped
- 1 clove garlic, minced
- 1/3 cup pecans, coarsely chopped
- Assorted crackers
Grilled Eggplant and Goat Cheese

Slice the eggplants in thin slices
- 5 small Japanese eggplants or 2 regular
- 1/3 cup fresh basil, chopped
- 3 oz. goat cheese crumbles
- 3 T. balsamic vinegar
- 1/2 cup toasted pine nuts

Weekend Brunch Casserole

Preheat Oven to 425 Crumble and cook sausage in skillet over medium heat until browned
- 1 pound Bob Evans Original Recipe Sausage Roll
- 2-1/2 cups shredded mozzarella cheese (I used a mix of cheeses, mozzarella, cheddar, colby)
- 1 (8 oz) can Pillsbury Crescent Rolls
- 4 eggs, beaten
- 3/4 cup milk
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Creamy Cajun Shrimp Linguine

Combine 1 cup water and broth in dutch oven, bring to a boil
- 1 cup water
- 1 14 oz chicken broth
- 6 oz linguine
- 1 lb shrimp, peeled and deveined
- 1 1/2 T butter
- 8 oz mushrooms, sliced
- 1 lg red bell pepper,cut in 1/4" slices
- 2 tsp flour
- 1 tsp cajun seasoning
- 1/4 tsp salt
- 2/3 cup half and half
- 1/4 cup parsley, chopped

Dad's Caesar Salad

- 2 cups croutons, garlic or caesar
- 3 qts Romaine, torn into bite size pieces
- 1/4 cup parmesan
- 1/2 cup extra virgin olive oil
- 1 T. worcestershire
- 3/4 tsp salt
- 1/4 tsp pepper
- 1 egg (coddled)
- 1/4 cup fresh lemon juice

Toss potatoes, peppers, carrots and 2 T
- 2 medium sweet potatoes, peeled and cut into 1/2" pieces
- 1 red bell pepper, cut into 1/2" pieces
- 2 carrots, peeled and cut into 1/2" pieces
- 5 T. olive oil
- 1 red onion, thinly sliced into rings
- 2 small zucchini, cut crosswise into 1/4" inch pieces
- salt and pepper
- 2 large ripe tomatoes, cut into 1/4" thick slices
- 1/2 cup parmesan
- 2 T. Italian bread crumbs

Sauté celery and onion in butter until soft, set aside
- 2 cups celery, chopped
- 1 cup onion, chopped
- 1/2 cup butter
- 1 pound ground beef
- 2 pound pork breakfast sausage
- 5 quarts hamburger buns, broken into pieces (1bun=approx 1 cup)
- 2 teaspoons poultry seasoning
- 1 tsp salt
- 1/4 teaspoon pepper
- 3 eggs, beaten
- 2 cups chicken broth, plus extra
