Egg & Sausage Casserole

Put croutons on bottom of 9 x 13 pan
- 2 cups seasoned croutons
- 1 lb breakfast sausage, cooked & drained
- 8 oz sharp cheddar, shredded
- 10 eggs
- 1 3/4 cups milk
- 1 1/2 tsp dry mustard
- salt & pepper
- 2 cans cream of mushroom soup
- 1 1/2 soup cans of milk
- *Can substitute bacon or ham and add green chilis
Sweet Potato Casserole

Boil and mash potatoes. Beat in sugar, butter, eggs, vanilla and milk
- Topping:
- 3 cups sweet potatoes (4 good size)
- 1/2 cup sugar
- 1/2 cup butter
- 1/3 cup milk
- 2 eggs, beaten
- 1 tsp. vanilla
- 1/3 cup melted butter
- 1 cup brown sugar
- 1/2 cup flour
- 1 cup chopped pecans
Turkey Breast - Herb Roasted

Barefoot Contessa recipe
- 1 whole bone-in turkey breast, 6 1/2 to 7 pounds
- 1 tablespoon minced garlic (3 cloves)
- 2 teaspoons dry mustard
- 1 tablespoon chopped fresh rosemary leaves
- 1 tablespoon chopped fresh sage leaves
- 1 teaspoon chopped fresh thyme leaves
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 2 tablespoons good olive oil
- 2 tablespoons freshly squeezed lemon juice
- 1 cup dry white wine
Patty Melt

Season the meat with salt and pepper to taste and form into 4 burgers the size of the rye bread
- 1 lb ground chuck
- 8 slices of rye bread
- 4 slices of swiss or sharp cheddar
- 2 medium sweet onions,sliced
- butter
- salt and pepper
Smashed Potatoes

Toss potatoes in olive oil and roast at 400 until tender - about 30-40 minutes
- 3 pounds baby red-skinned potatoes, unpeeled and halved
- 2-3 T. olive oil
- 2/3 cup freshly grated parmesan
- 1/2 cup melted butter
- salt and freshly ground pepper
Sauteed Italian Veggies

Can use as a side or put on pizza or pasta!
- 1/4 cup olive oil
- 1 large sweet onion, chopped
- 2 tsp garlic, minced
- 1 eggplant, peeled and chopped
- 1 large zucchini, chopped
- 2-3 cups mushrooms, sliced
- 1 can stewed tomatoes
- salt and peppper
- 1 tsp. parsley, oregano and basil
- 1/4 - 1/2 tsp red pepper

Mix beans, corn, chiles, peppers, onion and cilantro in a large bowl
- Dressing:
- 2 15 oz can black beans, rinsed
- 2 15 oz cans pinto beans, rinsed
- 2 15 oz cans white corn, rinsed
- 1 4 oz can chpd green chilis,undrained
- 2 jalapeno peppers, seeded and finely chopped
- 1 red bell pepper, chopped finely
- 1 green pepper, chopped finely
- 1 small red onion, chopped finely
- 1 bunch cilantro, chopped finely
- 1/2 cup rice vinegar
- 1/2 cup olive oil
- 1/3 cup sugar
- 1/2 tsp garlic powder

- One 15.25-ounce box devil's food cake mix (plus required ingredients)
- 6 tablespoons unsalted butter, at room temperature, plus 2 tablespoons unsalted butter
- 1 cup marshmallow fluff
- 1 1/2 cups confectioners' sugar
- 1/3 cup plus 1 tablespoon heavy cream
- 4 ounces semisweet chocolate chips
Thanksgiving Potatoes

Boil potatoes until tender in salted water, drain and put back in pot to dry off any excess water
- 5 lbs Yukon Golds, peeled and diced large
- 1 cup butter, room temp
- 4 oz cream cheese, room temp
- 3/4 cup sour cream
- 1/2 c milk
- salt and pepper
- Topping
- 3/4 c panko crumbs
- 3/4 c canned fried onions
- 1 c. white sharp cheddar
Caramelized Apple Slow Cooker Oatmeal

Generously grease the slow cooker
- 2 lbs (5 large) apples, chopped into 1" pieces (leave peel on)
- 3/4 c. brown sugar
- pinch of sea salt
- 1 T. cinnamon
- 1/2 tsp nutmeg
- juice from half lemon (1-2 T)
- 2 c. rolled oats
- 2 c. whole milk
- 2 eggs (optional)
- 1 c. water
- chopped walnuts and milk
