Mom's Crisp Oatmeal Cookies

Cream butter, sugar, egg and vanilla til light and fluffy
- 2 cups butter, softened
- 1 3/4 cup sugar
- 1 egg
- 1 tsp vanilla
- 2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 4 cups quick oatmeal

- olive oil
- 1 sm onion, chpd
- 4 cloves garlic, minced
- 1 lg eggplant, cut into 1/4" slices and quartered
- 1 - 28 oz can Italian plum tomatoes, crushed with your hands
- 2 springs fresh basil, plus leaves for garnish
- 1 sprig fresh thyme
- salt and pepper
- 1/2 lb pasta, medium sturdy shape

Sweet Potato Fries with Basil Salt and Garlic Mayonnaise

- 5 sweet potatoes, cut into about 1" x 5" fries
- 3 T. olive oil
- 2 T. fresh basil, chopped
- 2 tsp. kosher salt
- 1/2 tsp freshly ground pepper
- 3/4 cup mayo
- 1 clove garlic, minced
- 1 T. lemon juice
Braciole

Paul Tinaglia's recipe
- 12-15 pieces of round loin or veal leg, pounded thin (you can use flank, sirloin, veal, etc - just ask the butcher to prepare for braciole)
- 1 oz olive oil
- 1 c. onions, diced
- 4 cloves garlic, minced
- 1/4 lb prosciutto, julienned
- 1/2 lb soppressati, julienned
- 1 c. mozzarella, grated
- 1 T. fresh basil, parsley and oregano (for dried use 1/2 amount)
- 1/2 c. parmesan or asiago, grated
- 1 c. ricotta cheese
- 1/2 tsp red pepper
- salt, if needed
- 1 egg to bind
- 5 hard boiled eggs, chopped
