Mediterranean Marinade

Brush on just about anything, especially vegetables
- 2 T. olive oil
- 2 T. fresh rosemary, chpd
- 1 T. fresh thyme, chpd
- 1 T. shallots, minced
- 1 T. balsamic vinegar
- 1 T. whole grain mustard
- 1 tsp garlic, minced
- 1 tsp kosher salt
- 1 tsp freshly ground black pepper
Vegetarian Chili

Healthy vegetarian chili is perfect for a cool evening
- Garnishes:
- 1 tablespoon olive oil
- 1/2 medium onion, chopped
- 2 bay leaves
- 1 teaspoon ground cumin
- 2 tablespoons oregano
- 1 tablespoon salt
- 2 stalks celery, chopped
- 2 green peppers, chopped
- 1 jalapeno peppers, chopped
- 3 garlic cloves, minced
- 2 (4 ounce) cans chopped green chiles, drained
- 2 (12 ounce) packages vegetarian burger crumbles (optional)
- 3 (28 ounce) cans whole tomatoes, crush with your hands
- 1/4 cup chili powder, mix with some warm water
- 1 tablespoon black pepper
- 1 (15 ounce) can kidney beans, drained
- 1 (15 ounce) can garbanzo beans, drained
- 1 (15 ounce) can black beans, drained
- 1 (15 ounce) can corn, drained
- Chopped avocado
- Sour cream
- Shredded cheese
- Chopped green onions
- Jalapenos
Carrot Cake Banana Bread with Cream Cheese Frosting

•Preheat oven to 350 degrees F
- Frosting:
- 1 + 1/4 cups all-purpose flour
- 3/4 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/4 teaspoon fine sea or table salt
- 3/4 teaspoon ground cinnamon
- 2 large eggs, at room temperature
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup granulated sugar
- 1 cup mashed banana from very ripe bananas
- 1 + 1/2 cups firmly packed grated carrots
- 1/3 cup golden raisins
- 4 ounces cream cheese, at room temperature
- 4 ounces butter, at room temperature
- 2 cups confectioners' sugar
- 1/4 cup chopped walnuts, for garnish
One-Pot Chicken Cacciatore

Season chicken w salt, pepper and oregano and dredge in flour
- 8 -10 chicken thighs or 1 whole cut-up chicken
- salt & pepper & oregano
- flour
- olive oil
- 1 onion, chpd
- 5 garlic cloves, minced
- 1 red pepper & yellow pepper, diced
- 2 small carrots, peeled and sliced
- 8 oz baby bella mushrooms, sliced
- 1 c. chicken broth
- 1 c. dry white wine
- 1 - 14 oz crushed tomatoes
- 1 - 14 oz tiny whole tomatoes or whole tomatoes
- pitted kalmata olives, a large handful
- 1 tsp oregano
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 c. chpd fresh basil or 1 T. pesto
Roasted Asparagus Wrapped In Prosciutto

Preheat oven to 400. Snap off ends of asparagus and place on baking sheet
- 1 lb asparagus (about 19 stalks) trimmed
- 1 T. olive oil
- salt and freshly ground pepper
- 6 - 8 paper thin slices of prosciutto, halved lengthwise
Meatball Minestrone

- Soup:
- 1/3 cup olive oil
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 3 lg carrots, chopped
- 1 cup green beans, chopped
- 1 green pepper, chopped
- 2 sm zucchini, chopped
- 3 cups cabbage, shredded
- 5 cups beef broth
- 2 cups water
- 1 28oz can stewed tomatoes
- 1 15oz can tomato sauce
- 1 15oz can Northern beans
- 1 can tomato paste
- 1 T. basil, oregano & parsley
- 1 tsp. pepper
- 1/2 tsp. salt & red pepper
- 1 cup ditalini pasta, parcooked
- 1 cup red wine
- Meatball:
- 3/4 lb ground beef
- 3/4 lb Italian sausage, loose
- 1 med onion, chopped
- 1 cup Italian bread crumbs
- 1/3 cup milk
- 2 eggs
- 1 lg garlic clove, minced
- 1/4 cup parsley, chopped
- 1/2 tsp. fennel seeds, crushed
- 1 T. basil and oregano
- 1 tsp. salt and pepper
- 4 T parmesan
