Creamy Cajun Shrimp Linguine

Ingredients
- 1 cup water
- 1 14 oz chicken broth
- 6 oz linguine
- 1 lb shrimp, peeled and deveined
- 1 1/2 T butter
- 8 oz mushrooms, sliced
- 1 lg red bell pepper,cut in 1/4" slices
- 2 tsp flour
- 1 tsp cajun seasoning
- 1/4 tsp salt
- 2/3 cup half and half
- 1/4 cup parsley, chopped

Preparation
Step 1
Combine 1 cup water and broth in dutch oven, bring to a boil. Break pasta in half and add to pan. Bring to a boil, cover and simmer for 8 minutes. Add shrimp, cover and simmer for 3 minutes or until shrimp is done, drain.
Melt butter in a large skillet, add mushrooms and pepper, saute for 4 minutes. Add flour, seasoning and salt, saute about 30 seconds. Stir in half and half, cook 1 minute or until thick, stirring constantly. Add to pasta, add parsley and toss.
