Pork Teriyaki Stir Fry

Whisk together soy sauce, ginger, cornstarch and red pepper
- 1 c. Island Soyaki (Trader Joe's)
- 2 tsp fresh ginger, grated
- 1 T cornstarch
- 1/2 tso red pepper flakes
- 1 tsp sesame oil
- 1 lb pork tenderloin
- 1 red pepper, cut into strips
- 1-2 c. snap peas
- 1 broccoil crown, cut up
- 1 c. shitake mushrooms (or any type)
- 4 green onions, chpd
- 1 8 oz can bamboo shoots
- noodles or rice
Ricotta Orange Pound Cake

- 3/4 cup (1 1/2 sticks) unsalted butter, at room temperature, plus more to grease the baking pan
- 1 1/2 cups cake flour
- 2 1/2 teaspoons baking powder
- 1 teaspoon kosher salt
- 1 1/2 cups whole-milk ricotta cheese
- 1 1/2 cups plus 1 table spoon granulated sugar
- 3 large eggs
- 1 teaspoon pure vanilla extract
- 1 orange, zested
- 2 tablespoons amaretto Confectioners' sugar, for dusting
Spaghetti with Toasted Garlic Breadcrumbs

- 1 lb. thin spaghettini
- 1 tsp. salt for the pasta
- 3/4 cup extra virgin olive oil
- a small onion, finely chopped
- 4 garlic cloves, minced
- 1/2 tsp. salt
- 1 pinch oregano
- 1/4 tsp. freshly cracked black pepper
- 1-1/2 cups seasoned and dried breadcrumbs
- 1 Tbsp. butter
- 1/4 cup freshly grated parmesan cheese
- 1/4 tsp. dried red chili pepper flakes (pepperoncini)
- small fresh basil leaves and shaved parmesan to garnish
- 1/4 cup basil pesto (homemade or store-bought) to pass around and offer to guests to mix into their pasta if desired.
Scalloped Pineapple

Combine everything and put in 8 x 8 casserole dish
- 2 eggs, beaten
- 4 slices white bread, cubed
- 1/2 cup sugar
- 1 T. lemon juice
- 1/4 cup melted butter
- 1 - 20 oz can crushed pineapple, drained
- 1 handful of mini marshmallows

A dish we loved in Sicily
- 1 large eggplant, semi-peeled, alternate peeling, cut into 1" dice
- Olive oil
- Salt and pepper
- 1 lg onion, chpd
- red pepper flakes (to taste)
- 1 fennel bulb, cut into 1/2" dice
- 3 ribs celery, cut into 1/2" dice
- 6 garlic cloves, minced
- 2 red and 1 yellow pepper, cut into 1/2" dice
- 2 med zucchini, cut into 1/2" dice
- 1/2 c water
- 1/2 c tomato paste
- 2 T sugar
- 1/4 c red wine vinegar
- 1/4 c. golden raisins
- 1/4 c. capers
- 1/4 c. pine nuts, toasted
- 1/3 c. kalamata olives, cut in half
- 1/3 c. green olives, cut in half
- 1/2 bunch mint, cut into chiffonade
- 1/2 bunch basil, cut into chiffonade
Smoked Beef Brisket

- 4-6 lb. beef brisket
- 1-2 tsp. garlic salt
- 1-2 tsp. onion salt
- 1/3 cup worcestershire sauce
- 1 can beef broth
- 2-3 T. liquid smoke

Zucchini Gratin

Preheat your oven to 375 degrees F
- 2 tablespoons butter
- 1 medium onion, chopped
- 3 cloves garlic, chopped
- 6 zucchini, sliced into half moons 1/4-inch thick
- 2 plum tomatoes, chopped and seeded
- 1 tablespoon freshly chopped thyme leaves
- 2 tablespoons all-purpose flour
- Salt and freshly ground black pepper
- 1 tablespoon brown sugar
- 2 eggs, beaten
- 1/2 cup half-and-half
- 1/4 cup grated sharp white Cheddar
- 1/4 cup grated Parmesan

- 3 cups rolled oats
- 1 cup almonds, chopped (or any nut)
- 1 cup pecans, chopped (or any nut)
- 3/4 cup shredded sweet coconut
- 1/4 cup plus 2 tablespoons dark brown sugar
- 1/4 cup plus 2 tablespoons maple syrup
- 1/4 cup vegetable oil
- 3/4 teaspoon salt
- 1 cup raisins (or any dried fruit)
Spicy Slaw

In a large bowl add the vinegar, olive oil, honey, hot sauce, chia and salt to make the dressing
- 2 tbsp apple cider vinegar
- 1 tbsp olive oil
- 1 tbsp honey
- 1 tbsp hot sauce (sriracha)
- 2 tbsp chia seeds
- Pinch of salt
- 1 bag coleslaw or broccoli slaw mix (5 servings/14oz)
- 1 oz cashews (optional)
Pork Tenderloin, Marinated

- Marinade:
- 2 whole pork tenderloins
- 1/2 cup soy sauce
- 1/4 cup chopped green onion
- 2 cloves garlic minced
- 1 tsp. ground ginger
- 1/2 tsp. pepper
- 1/4 cup sesame seeds
- Sauce:
- 1/3 cup sour cream
- 1/3 cup mayonnaise
- 1 tbsp. green onion
- 1 1/2 tsp vinegar
- 1 tsp. dry mustard
- Mix well and serve at room temperature.
