Spinach Salad

Combine dressing ingredients and refrigerate if not using right away
- Dressing:
- 1 lb baby spinach, cleaned and dried
- 2 hard boiled eggs, chopped
- 1 sm red onion, chopped
- 6 slices crisp bacon
- pepper
- 1 cup oil
- 1/4 cup & 2 T wine vinegar
- 2 T. lemon juice
- 5 T. sugar
- 1 tsp salt
- 1 tsp dry mustard
- 1 tsp grated onion

- 1/4 c. tomato paste
- 1 28 oz can diced tomatoes in juice
- 1 1/2 c dry white wine
- 5 c fish stock

- 4 lbs seafood

Chicken Milanese

I like using chicken tenderloins but if you use chicken breasts pound them a little first
- Chicken tenderloins or chicken breasts

- seasoned bread crumbs
- Panko bread crumbs

Asparagus, Blue Cheese & Tomatoes

- 2 med. tomatoes, cut up
- 1/2 - 1 cup blue cheese or gorgonzola

Roasted Cauliflower

Put cauliflower in 9 x 13 casserole
- 2 heads cauliflower, broken into large florets
- 1/2 cup white wine
- 1/2 cup chicken broth
- 1 T. olive oil, plus more for drizzling
- 1 tsp oregano
- kosher salt and black pepper
- 6 garlic cloves, sliced thinly
- 1/2 cup Italian bread crumbs
- 2 T. fresh Italian parsley, chopped
- 1 cup coarsely shredded parmesan
Chicken Noodle Soup

Simmer chicken in water with salt and parsley sprigs for about 45 minutes
- 3 qts water
- 1 whole fryer (3-4 lbs)

- 2 chicken bouillon cubes
- 1/4 cup chopped parsley

- 2 cups celery, chopped

Thanksgiving Turkey

- BRINE
- 3 cups apple juice or apple cider
- 2 gallons cold water
- 4 tablespoons fresh rosemary leaves
- 5 garlic cloves, minced
- 1 1/2 cup kosher salt
- 2 cups brown sugar
- 3 tablespoons peppercorns
- 5 whole bay leaves
- Peel of three large oranges
- TURKEY BROTH
- 1 tablespoon vegetable oil
- Reserved turkey neck and giblets
- 1 large carrot, coarsely chopped
- 1 onion, coarsely chopped
- 1 large celery stalk, coarsely chopped

- 3 cups turkey stock, chicken stock, or canned low-salt chicken broth

- 1/2 cup fresh breadcrumbs ( I used whole wheat breadcrumbs)

- 1 cup chopped onion
- 2 cloves of garlic
- 1/2 cup ketchup, divided
- 3 ounces white cheddar cheese, diced
- 1/4 cup chopped parsley
- 2 TBSP grated parm. cheese
- 1 TBSP prepared horseradish
- 1 TBSP Dijon mustard
- 3/4 tsp. dried oregano
- 1/4 tsp. salt
- 1/4 tsp. fresh ground pepper
- 1 1/2 pounds of ground sirloin
