- 3 cups chicken broth

- 1/2 cup (1 stick) unsalted butter, room temperature
- 1/2 cup granulated sugar
- 1 large egg, room temperature
- 2 teaspoons vanilla extract
- grated lemon zest of 1 lemon

- 1 1/2 cups powdered sugar

Chicken and Broccoli Casserole

- 2 big bunches of broccoli, cut into florets and steam until tender
- 6 chicken breasts or 1 roaster chicken, cut into bite size pieces
- 2 cans cream of chicken soup
- 1 can cream of mushroom soup
- 1 cup mayo
- 1 T. lemon juice
- 1/4 tsp curry powder
- 1/2 cup shredded cheddar
- 1/2 cup bread crumbs
- 1/2 stick butter
- rice
- 1-2 tsp curry powder

Enchiladas

Brown ground beef with onion, drain grease and add olives and salsa
- 1 can enchilada sauce
- 1 can tomato sauce
- 1 sm can sliced black olives
- 1 med onion, chopped
- 1 lb ground beef
- 1 lb shredded sharp cheddar
- 3/4 cup salsa
- 1 dozen tortillas
- Rice a Roni Spanish Rice

Chicken Marsala

Skinny Taste recipe (You can substitute the mushrooms for what is available)
- 2 large boneless, skinless chicken breasts
- salt and pepper
- 1/4 cup plus 1 tsp flour
- 1 T butter
- 2 tsp olive oil
- 3 garlic cloves, minced
- 1/4 c. shallots, finely chpd
- 8 oz cremini mushrooms, sliced
- 3 oz shitake mushrooms, sliced
- 1/3 c. Marsala wine
- 1/2 c. chicken broth
- 2 T. parsley, chpd
Veggie Pizza

Saute onion and peppers in oil for a few minutes
- 1/4 cup olive oil
- 1 large sweet onion, chpd
- 1 green pepper, chpd
- 1 red pepper, chpd
- 2 tsp garlic, minced
- 1 eggplant, peeled and chopped
- 1 large zucchini, chopped
- 2-3 cups mushrooms, sliced
- 1 lg. can stewed tomatoes

- 1 tsp. each parsley, oregano and basil
- 1/4 - 1/2 tsp red pepper
- 2 c. mozzarella
- 1/2 c. parmesan cheese

Lamb Chops with Chianti Vinaigrette

Salt and pepper ribs and marinate in olive oil, balsamic vinegar, garlic and rosemary
- Chianti Vinaigrette:
- 8-10 lamb ribs
- olive oil
- fresh chopped rosemary
- minced garlic
- balsamic vinegar

- 2 cups Chianti
- 1 T. honey
- 1 T. fresh rosemary, chopped
- 1 tsp kosher salt
- 1 tsp. freshly ground pepper

- 2 Granny Smith apples, peeled, cored, and sliced
