Grilled Eggplant and Goat Cheese

  • 5 small Japanese eggplants or 2 regular
  • 1/3 cup fresh basil, chopped
  • 3 oz. goat cheese crumbles
  • 3 T. balsamic vinegar
  • 1/2 cup toasted pine nuts
  • 3 T. olive oil
  • salt and pepper


Servings 6


Step 1

Slice the eggplants in thin slices. Drizzle with olive oil and salt & pepper. Grill to desired doneness. Drizzle with balsamic vinegar, add goat cheese crumbles, pine nuts and chopped basil.
