Stuffed Green Peppers

Wash & core peppers, par boil for about 5 minutes
- 6 large green peppers
- 5 T. oil
- 1 lb ground beef
- 1 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp oregano
- 1 tsp garlic, minced
- 3 cups cooked rice
- 1/2 cup bread crumbs
- melted butter
- 2 lg. can tomato sauce, add basil, parsley & oregano
- OR 5 cups spaghetti sauce is the best!
Avocado Bean Dip

Drain beans and corn. Mix together all ingredients and refrigerate until serving
- 1 can black beans
- 1 can mexicorn
- 3 green onions, chpd
- 2 tomatoes, chpd
- 2 avocados, cut into bite size pieces
- 1 pkg Good Season Italian seasoning
- 1/4 cup oil
- 1/4 cup vinegar

Spiced Nuts

- 1/2 tsp ground cumin
- 1/2 tsp cayenne pepper
- 1/2 tsp ground cinnamon
- 4 cups unsalted mixed nuts, such as walnuts, pecans, hazelnuts, and almonds

- 6 T brown sugar
- 1 tsp salt
