Baked Red Velvet Donuts

Homemade cake donuts with a simple glaze, cream cheese icing and decorations of choice
- DONUTS:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup sugar
- 1 extra-large egg
- 3 tablespoons unsalted butter, melted
- 2 ounces unsweetened chocolate, melted
- 1 teaspoon vanilla extract
- 3/4 cup buttermilk
- 2 tablespoons red liquid food coloring
- SIMPLE GLAZE:
- 2 cups confectioners’ sugar
- 1 tablespoon heavy cream or whole milk
- 1/4 teaspoon vanilla extract
- 2 tablespoons hot water
- CREAM CHEESE ICING:
- 2 to 3 ounces cream cheese, softened
- 1 1/2 cups confectioners powdered sugar
- 2 to 3 tablespoons heavy cream or whole milk
- 1/4 teaspoon vanilla extract
- Pinch of salt
Loaded Baked Potato Casserole

- Sour cream
- Salt and pepper to taste
- Shredded cheddar cheese

Lemon Glazed Blueberry Scones

Best scones EVER!! Tender, buttery scones bursting with fresh blueberries and finished with a simple lemon glaze
- DOUGH:
- 2 cups all-purpose flour
- 1/3 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 tablespoon finely grated lemon zest (1 lemon)
- 4 tablespoons cold salted butter, cut in small cubes
- 2 tablespoons cold vegetable shortening (can omit and increase the butter to 6 T.)
- 1 1/3 cups fresh blueberries
- 3/4 cup whole milk or Half-and-Half
- GLAZE:
- 1 cup confectioners sugar
- Pinch of salt
- 2 to 2 1/2 tablespoons fresh lemon juice
Spicy Orange Chicken

Tender, fried chicken bites are tossed a spicy homemade orange sauce
- Sauce:
- 1 cup Smucker's sweet orange marmalade sauce
- 1/2 cup Smucker's apricot preserves
- 1/3 cup Sweet Baby Ray's barbecue sauce
- 1/4 teaspoon ground ginger
- Dash garlic powder, or to taste
- Dash black pepper, or to taste
- 1/2 teaspoon crushed red pepper flakes, or to taste
- 2 1/2 tablespoons white vinegar
- 1 teaspoon low-sodium soy sauce (I used LaChoy)
- Dash salt, optional
- Chicken:
- 3 boneless, skinless chicken breasts, cut in bite-sized pieces
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/2 cup cornstarch
- Little salt and pepper
- Vegetable oil, for frying chicken
- To serve:
- Cooked white rice
- Chopped green onions for garnish, optional

- 20 medium shrimp, shells removed and deveined (I used frozen that were already deveined)
- 2 cloves garlic, thinly sliced or minced
- Salt and black pepper, to taste
- 2 teaspoons salted butter
- 1 tablespoon olive oil
Broccoli Cheddar Baked Potato

- Cheddar Cheese Sauce:
- 2 tablespoons margarine (I used Smart Balance, Original)
- 3 tablespoons all-purpose flour
- 1/8 teaspoon dry mustard
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- Pinch paprika
- 1 1/3 cups whole milk or half-and-half (or combination)
- 1 (8 oz) block Sharp cheddar cheese, shredded (I used Kraft 2%)
Creole Chicken Noodle Casserole

Easy chicken and noodle casserole that uses a traditional Rotisserie chicken or boiled fresh chicken
- 3 1/2 cups cooked chicken, (I used a whole Rotisserie, Traditional)
- 8 ounces egg noodles
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 3/4 cup sour cream
- 1/4 teaspoon garlic salt
- 1/2 teaspoon creole seasoning (like Tony Chachere's)
- 1/8 teaspoon black pepper
- 1 - 2 cups shredded Cheddar or Colby Jack cheese
- 1/2 cup plain Panko bread crumbs (or crushed buttery crackers)
- 1 Tablespoon butter or margarine
