Hash Brown Casserole

Made famous by Cracker Barrel, this cheesy potato casserole is a great side dish for any kind of meat
- 1 (32 oz) bag frozen hash browns (I used diced variety)
- 1 can cream of chicken soup (can use 98% FF)
- 1/3 cup finely minced onion
- 3 tablespoons margarine, melted
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cups grated or shredded Colby cheese, divided

- 2 teaspoons bacon fat (for the skillet)
- 2 1/4 cups self-rising White Lily flour
- 1/2 stick (4 T) very cold butter, cubed (I used salted)
- 2 tablespoons cold vegetable shortening (I used Crisco)
- 1 to 1 1/4 cups cold buttermilk
- 2 tablespoons melted butter, for brushing top
- A 10-inch well-seasoned cast iron skillet with a cover that fits

- Melting white chocolate (I used white chocolate chips)

Ranch Green Beans & Potatoes w/ Bacon

Drain the beans and beans & potatoes in a colander then rinse under cold tap water; set aside to drain well
- 3 (29 oz.) cans Delmonte Cut Green Beans & Potatoes, drained and rinsed
- 4 strips crispy-cooked bacon, cut or torn into small pieces (I used thick-cut bacon)
- 3 tablespoons unsalted butter
- 1 small onion, cut into thin wedges
- 2 cloves minced fresh garlic (1 tsp.)
- 3 teaspoons dry Hidden Valley Ranch Salad Dressing Mix
- 1/2 teaspoon coarse ground black pepper
- Salt to taste, optional

- 2 tubes (cans) refrigerated crescent rolls (I used Pillsbury brand)
- 8 frozen sweet potato (yam) patties, partially thawed
- 1 1/2 cups sugar
- 1 1/2 tablespoons cornstarch
- good pinch of salt
- 1 cup Mountain Dew soda
- 1 cup water
- 1 teaspoon lemon juice, optional (I used ReaLemon)
- 5 tablespoons butter
- 2 teaspoons vanilla extract
- Cinnamon for sprinkling the tops
- (NOTE: You can omit the Mountain Dew and increase the amount of water to 2 cups.)

- 1 large rib celery, finely chopped (1/4 c.)
- 1 small onion, finely chopped (1/4 c.)
- 1 green onion, finely sliced (about 1 Tbl.)
- 1 teaspoon kosher salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1 teaspoon spicy creole mustard (I used Zatarain's)
