Baked Red Velvet Donuts

Homemade cake donuts with a simple glaze, cream cheese icing and decorations of choice. Sweet idea for Valentine's Day or any occasion, especially a brunch or breakfast buffet.

Ingredients

  • DONUTS:
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • 1 extra-large egg
  • 3 tablespoons unsalted butter, melted
  • 2 ounces unsweetened chocolate, melted
  • 1 teaspoon vanilla extract
  • 3/4 cup buttermilk
  • 2 tablespoons red liquid food coloring
  • SIMPLE GLAZE:
  • 2 cups confectioners’ sugar
  • 1 tablespoon heavy cream or whole milk
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons hot water
  • CREAM CHEESE ICING:
  • 2 to 3 ounces cream cheese, softened
  • 1 1/2 cups confectioners powdered sugar
  • 2 to 3 tablespoons heavy cream or whole milk
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Step 1

Donuts:

Preheat the oven to 350°F. Spray a standard size donut pan with cooking spray.

In a bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.

In a separate large bowl, beat together using a mixer the sugar and egg, 1 to 2 minutes. Beat in the melted butter and melted chocolate. Beat in the vanilla and buttermilk; then the food coloring.

Gradually beat the flour mixture into the red mixture, mixing just until combined.

Fill the donut cups about 3/4 full with the batter.

Bake for 10 to 12 minutes, just until tops spring back when lightly touched. Do not over-bake.

Simple Glaze:

Place a piece of foil, wax paper, or parchment paper underneath a wire cooling rack to catch the Glaze drippings.

In small bowl, vigorously whisk together all the Glaze ingredients until sugar is completely dissolved.

Dip the tops of warm donuts in the glaze, allowing the excess to drip back into the bowl. Place dipped donuts on the cooling rack. (If the glaze starts to harden or the donuts have cooled, add a little more hot water to it.) If you are going to use the cream cheese icing too, be sure the simple glaze has hardened first.

Cream Cheese Icing:

Add all the ingredients to a bowl and beat with a mixer until smooth. Spoon the Icing over the donuts using the back of the spoon to spread it out. If desired, decorate tops of donuts with assorted sprinkles, coarse decorating sugar, or crumbled donut crumbs.
