- Cake:
- 1 box white cake mix, plus ingredients to prepare as listed on box
- 2 teaspoons fresh lemon juice
- 1 tablespoon grated lemon zest
- Filling:
- 1 (8 oz) package cream cheese, slightly softened
- 3 tablespoons fresh lemon juice
- 2 1/3 cups confectioners sugar
- 1 cup heavy whipping cream
- Milk Crumb Topping: recipe in Directions
Blueberry Cheesecake Galette

Blueberry and cheesecake fillings are partially folded up in a homemade crust and baked
- Crust:
- 1 3/4 cups all-purpose flour
- 2 tablespoons sugar
- Dash of kosher salt
- 1 stick (1/2 cup) cold unsalted butter, cubed
- 1 teaspoon apple cider vinegar (I used Great Value)
- 1 large egg
- 2 tablespoons water
- Cooking spray
- Cream Cheese Filling:
- 1 (8 oz) package cream cheese, softened
- 1 large egg yolk (reserve the white for the crust)
- 3 tablespoons sugar
- 1/2 teaspoon vanilla extract
- Blueberries:
- 2 1/4 cups fresh blueberries (make sure they're completely dry)
- 1/3 cup sugar
- 4 teaspoons cornstarch
- 1 tablespoon fresh lemon juice
- To finish:
- Reserved egg white for brushing crust
- Coarse white sugar, for sprinkling on crust

- 1 1/2 1 1/2 1/2 cups all-purpose flour
- 1/2 1/2 1/2 teaspoon baking soda
- 1/2 1/2 1/2 teaspoon salt

- 1/3 1/3 1/3 teaspoon ground nutmeg
- 1/4 1/4 1/4 teaspoon ground cloves
- 1 1 1 stick (1/2 c) unsalted butter, softened

- 1/2 1/2 1/2 cup light brown sugar, firmly packed

- 6 ozs. bright white candy melts
- 6 ozs. red candy melts
- 1 teaspoon vegetable shortening, divided
- 8 cups Rice Chex cereal, divided
- 1 small box Cherry Jell-O gelatin (I used S.F.)
- 1 small packet unsweetened Cherry Kool-Aid powder
- 1 1/2 cups confectioners powdered sugar

- 1 (8 oz) package cream cheese
- 1/3 cup sugar
- 1/2 teaspoon vanilla extract
- 1/2 to 1 cup Cool Whip, optional but recommended
- 1/2 cup graham cracker crumbs
Honey Chipotle Chicken Tenders

Panko coated chicken tenders are baked then dipped in a sweet and spicy sauce for a crispy, flavorful meal
- CHICKEN:
- 7 to 8 skinless chicken tenders
- Salt and pepper
- 1/2 cup all-purpose flour
- 1 1/3 cups plain Panko bread crumbs
- 2 large eggs, whisked
- CHIPOTLE SAUCE:
- Scant 1/2 cup sugar
- 1/3 cup honey
- 1 canned chipotle pepper, chopped
- 1 1/2 tablespoons chipotle adobo sauce (the sauce that canned chipotle peppers are packed in)
- 1/4 cup ketchup (I use Hunt's)
- 2 teaspoons barbecue sauce (I used Original K.C. Masterpiece)
- 1 tablespoon white vinegar
- 1/2 teaspoon salt
- 1/3 teaspoon black pepper
- 1/3 teaspoon garlic powder

Peach Cobbler Pull-Apart Bread

Super simple recipe using canned honey butter biscuits and peach preserves
- 1 (16.3-ounce) tube refrigerated Pillsbury Grands Flaky Layers Honey Butter biscuits
- 3/4 cup peach preserves (I used Smucker's)
- 1/4 cup granulated sugar
- 1/2 teaspoon cinnamon
- 1 cup confectioners powdered sugar
- 1 or 2 drops vanilla extract, optional
- Pinch salt
- 2 to 3 teaspoons heavy cream, Half and Half, or whole milk
Crawfish Cornbread

A Cajun version of Mexican cornbread with the addition of crawfish tails
- 1 (12-16 ounce) package frozen crawfish tails, thawed
- 1 medium yellow onion, chopped (2/3 cup)
- Half a medium bell pepper, chopped (1/2 cup)
- 1 tablespoon butter (I used salted)
- 4-5 green onions (tops only), chopped
- 2 fresh jalapeno peppers, seeded and sliced (or chopped)
- 2 cups yellow corn meal (I used Aunt Jemima's)
- 3 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3 extra-large eggs, lightly beaten
- 1/2 cup oil (I used canola)
- 1 cup milk (I used 2%)
- 1 1/2 cups cheddar cheese, grated, shredded, or cubed
- 1 (11 ounce) can Green Giant Niblets whole kernel corn, drained
- 1 teaspoon Tony Chachere's Original creole seasoning
- Garlic salt, to taste
- Black pepper, to taste
Garlic Mashed Potatoes

- 2 1/2 - 3 lbs small red potatoes, unpeeled, cut into halves or quarters
- 1/2 cup margarine (1 stick)
- 2/3 - 1 cup whole milk, half-and-half, or heavy cream (or a combination)
- scant 1/8 tsp garlic powder, or to taste
- 1 teaspoon salt
- 1/4 teaspoon black pepper
