A great way to start the day
- TOPPING:
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
- 1 large egg
- 1 1/3 cups mashed, ripe bananas (about 2 med-large)
- 1/4 cup canola or vegetable oil
- 1/2 cup vanilla yogurt or Greek yogurt (or plain)
- 3/4 cup sugar
- 3/4 cup quick-cooking oats, uncooked
- 1 tablespoon butter, softened slightly
- 2 tablespoons all-purpose flour
- scant 1/4 teaspoon cinnamon
- 1/4 cup finely chopped pecans
- 1/4 cup light brown sugar, packed

- Pecan Crust:
- 1 1/2 cups all-purpose flour
- 1 stick (1/2 cup) unsalted butter, softened
- 1/8 teaspoon salt
- 3/4 cup ground or finely chopped pecans

- Blueberry Sauce:
- 1/2 cup sugar
- 2 1/2 teaspoons cornstarch
- Dash salt
- 1/2 cup water
- 2 3/4 cups fresh (or frozen blueberries), divided
- 3 teaspoons fresh lemon juice
- 1 teaspoon grated lemon zest
- Vanilla ice cream, cheesecake, waffles, etc. for serving

- No-Bake Cheesecake:
- 1 1/2 packages (12 ozs) cream cheese, softened
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
- 8 ounces thawed Cool Whip (can use a bit more)

- 2 sticks (1-cup) unsalted butter, softened
- 1/2 cup confectioners powdered sugar
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour, chilled
- 1 cup finely chopped or ground pecans
- 1/3 teaspoon salt
- Confectioners powdered sugar, for rolling (about 1 c.)
Cranberry Chicken Salad

Yummy chicken salad with dried cranberries, celery, toasted pecans, and a creamy curry dressing
- 2 1/2 cups cooked white chicken, chopped
- 1/2 cup dried cranberries
- 1/3 cup toasted pecans, chopped
- 1/3 cup celery, finely chopped
- 1/3 cup mayonnaise
- 1/3 cup sour cream
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon curry powder
- 1/8 to 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 to 3 medium Fuji or Gala apples, sliced into thin rounds from top to bottom
- Lettuce leaves, for serving

- 3 tablespoons half-and-half or milk

- 1 (15-ounce) can pumpkin puree
- 1 (14-ounce) can sweetened condensed milk (I used fat free)
- 1/2 teaspoon cinnamon
- 1/2 teaspoon pumpkin pie spice
- 1/4 teaspoon salt
- Cool Whip or prepared whipped cream, for serving
Baked Spaghetti

A family-favorite recipe using everyday common ingredients and requiring no special cooking skills
- 1 pound lean ground beef (I used 93/7)
- 1 small onion, chopped (1/2 cup)
- 2 cloves garlic, finely chopped or minced
- 1 teaspoon salt, or to taste
- 1/2 teaspoon freshly ground black pepper, or to taste
- 1 (24 oz) can Hunt's Traditional Pasta Sauce
- 1 (14.5 oz) can Hunt's Petite-Diced Tomatoes, undrained
- 1/4 cup water
- 1/4 teaspoon dry Italian Seasoning
- Crushed red pepper flakes, to taste (optional)
- 1/2 teaspoon sugar
- 10-12 ounces spaghetti (I prefer thin spaghetti)
- 1 (8 oz) block Monterey Jack (or Mozzarella) cheese, freshly shredded
- Grated Parmesan cheese for serving, optional
