Strawberry Shortcake Milkshakes

Fresh strawberries, vanilla ice cream, and pound cake (or shortbread cookies) in a blender
- For 2 shakes:
- 6 - 8 fresh strawberries (depending on size)
- 4 large scoops vanilla ice cream
- dab of milk to blend, if needed
- 1 medium slice pound cake, homemade or store bought (or 4-6 shortbread cookies, broken)
- 2 teaspoons honey
- 2 Tablespoons graham cracker crumbs
- Garnishes - 2 whole, stemmed strawberries and/or whipped cream
Orange Cranberry Scones

Citrus-y and not too sweet, they're perfect for breakfast or afternoon teas
- Glaze:
- 2 cups flour
- 3 tablespoons sugar
- 1 tablespoon grated orange peel
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup cold butter
- 1 cup dried cranberries
- 1/4 cup orange juice
- 1/4 cup heavy cream
- 1 egg
- 1 tablespoon heavy cream (to brush over scones)
- Sugar to sprinkle over scones
- 1/2 cup powdered sugar
- 1 - 2 tablespoons orange juice

- 5 even slices sandwich bread
- 1 small container ground ginger
Icebox Fruitcake

Fruity, nutty no-bake vintage Christmas fruitcake from the 70's
- 1 (14.4 oz) box honey graham crackers (or regular graham crackers)
- 1 (14 oz) can sweetened condensed milk (I used FF)
- 1/8 - 1/4 teaspoon salt
- 1 3/4 cups coarsely broken pecans
- 3/4 cup halved candied red cherries
- 1/2 cup chopped dried* or candied pineapple (I used dried sweetened pineapple* - see note at end)
- 1/2 cup chopped dates (or dark raisins) (I used already chopped, sweetened dates)
- 1/2 cup sweetened flaked coconut
- 1/4 teaspoon ground cinnamon
Texas Sheet Cake

- Cake:
- 2 cups all-purpose flour
- 2 cups sugar
- 1/4 teaspoon salt
- 1/4 cup cocoa
- 2 sticks (1 cup) butter
- 1 cup boiling water
- 2 eggs, beaten
- 1/2 cup buttermilk
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- Frosting:
- 3/4 cup chopped pecans
- 3 cups confectioners sugar
- 6 tablespoons milk or half-and-half
- 1 teaspoon vanilla extract
- 6 tablespoons (3/4 stick) butter
- 1/4 cup cocoa
Open-Faced Turkey Sandwich

Great for using up holiday leftovers
- For each sandwich:
- Sliced whole grain or wheat bread
- Roughly sliced leftover turkey, warmed slightly
- Hot Mashed potatoes
- Turkey gravy, warmed
Meatball Parm

In a mixing bowl, combine the meatball ingredients
- Meatball ingredients:
- 1 1/2 pounds ground beef (90% lean)
- 2/3 cup plain bread crumbs (I used Progresso brand)
- 3/4 cup grated Parmesan cheese
- 2 large eggs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon dried parsley flakes
- 2 tablespoons milk
- Additional ingredients:
- 4 1/2 - 5 cups red Pasta Sauce of choice (I used 1 1/2 (24 oz) cans Hunt's 'Traditional' Pasta Sauce)
- 1 (8 oz) package shredded Mozzarella cheese
- Cooked pasta of choice, optional
- Toasted French bread (or other crusty bread)
Butterfly Cupcakes

- Prepared and cooled white or vanilla cake mix cupcakes (I used Betty Crocker Golden Vanilla cake mix)
- Prepared whipped cream (needs to be stiff)
- Confectioners sugar
- Round edible decorations of choice for center
Shoo Fly Pie

This is a wet bottom version of the famous Pennsylvania Dutch pie
- Crust:
- 1 (9-inch) unbaked deep-dish pie crust (I used frozen)
- Crumbs:
- 1 cup all-purpose flour
- 2/3 cup packed light brown sugar
- Scant 1/4 teaspoon salt
- 3 tablespoons cold butter, or cold vegetable shortening
- Filling:
- 3/4 cup hot water (but not boiling)
- 1 cup light molasses
- 3/4 teaspoon baking soda
- 1 egg, lightly beaten
