Quick Italian Beef and Vegetable Soup

1. Heat Dutch oven or large saucepan over medium heat until hot
- 1 pound ground beef
- 1 clove garlic, crushed
- 1/4 teaspoon pepper
- 1/2 teaspoon salt
- 2 14 oz. cans beef broth
- 1 14 oz. can stewed tomatoes, Italian-style, undrained, broken up
- 1 cup carrots, sliced 1/4" thick
- 1 15 oz. can Great Northern beans, rinsed, drained
- 1 zucchini, cut lengthwise in 1/2 and crosswise into 1/4" thick slices
- 2 cups spinach leaves, lightly packed, torn

Marinated Pork Roast

- 2 cloves garlic
- 1 tablespoon dry mustard
- 1 teaspoon ginger

- 1 * 4-5 LB pork roast

- 1 pound * SHARP CHEESE
- 1 stick butter
- 1 stick * OLEO (Parkay)
- 3 cups PLAIN flour
- 1 dash black pepper 1/4t
- 1 dash ( TO TASTE) garlic powder 1 t
- 1/2 teaspoon salt
- 1 dash (TO TASTE) * RED PEPPER 1/4 t
Cornish Hens Burgundy

Cook rice according to package directions and stuff hens
- 1 6 oz. package wild and white rice mix
- 4 each 4 each cornish hen
- salt and pepper, to taste
- 1 cup burgundy wine
- 1 cup currant jelly
- 4 tablespoons butter
- 2 tablespoons lemon juice
- 2 teaspoons cornstarch
- 3 teaspoons Worcestershire sauce
- 1 teaspoon ground allspice
- 1 dash salt and pepper
Grilled Orange Roughy

- 3 tablespoons olive oil
- 2 cloves MINCED garlic
- 1 * MED MINCED FINE onion
- 1/4 teaspoon salt
- 1/4 teaspoon FRESH CRACKED pepper
- 4 tablespoons CHOPPED FRESH basil
- 3 cups FRESH CHOPPED tomatoes
- 1/2 JUICE lemon
- 3 * 6-8 0Z FILLETS orange roughy

- 1 cup SLICED * MUSHROOMS
- 2 tablespoons SLICED scallions

- 1 teaspoon margarine
- 1 tablespoon flour
- * TO TASTE salt
- * TO TASTE pepper
- dash nutmeg
- 1 cup * LOWFAT MILK
- 2 tablespoons GRATED Parmesan cheese
- 1 cup FRESH OR CANNED * CRABMEAT
- 1 tablespoon (OPTIONAL) fresh parsley

- 1/2 cup sugar
- 2 BEATTEN eggs

- 2 stalks celery, Finely Diced

- 1 1/2 cups mayonnaise
- 1 1/2 tablespoons white wine vinegar
- 2 tablespoons lemon juice, Freshly Squeezed
- 1/4 teaspoon white pepper
