Mix all ingredients together in a non-metallic bowl and refrigerate

  • 3 lbs Tomatoes (peeled, seeded, & diced)
  • 1 1/2 qts Tomatoe Juice
  • 3/4 C Balsamic vinegar
  • 1/4 C Olive oil
  • 2-3 T Tabasco
  • 3 cloves Garlic (chopped fine)
  • 1/2 C Parsley (chopped fine)
  • 1/2 C Cilantro (chopped fine)
  • 1/2 C Basil leaves (chopped fine)
  • 1 English cucumber (partially peeled)
  • 2 pieces Roasted red pepper, (diced)
  • 1/2 C Onion (diced)
  • 1/2 bunch Scallions (diced)
  • 2 lg stalks Celery (diced)
  • 1 1/2 Green peppers (cored & diced)
  • 1 1/2 Red peppers (cored & diced)
  • Salt & pepper to taste

Sift together flour, sugar, baking soda, salt, and cinnamon

  • Frosting:
  • 2 cups flour
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 1/2 cups cooking oil
  • 2 1/2 cups carrots, grated finely
  • 4 eggs
  • 1 cup nuts
  • 1 8 oz. package cream cheese
  • 1/2 cup margarine, (do not use butter)
  • 1 16 oz. package powdered sugar
  • 2 teaspoons vanilla
  • Sift together flour, sugar, baking soda, salt, and cinnamon.
  • Add cooking oil and beat well. Add carrots, blend in.
  • Add eggs, 1 at a time, beating well after each addition.
  • Add nuts. Bake at 350 degrees for 40 minutes.
  • Beat well cream cheese, margarine, powdered sugar and vanilla. Ice cake.
