Gazpacho

Mix all ingredients together in a non-metallic bowl and refrigerate
- 3 lbs Tomatoes (peeled, seeded, & diced)
- 1 1/2 qts Tomatoe Juice
- 3/4 C Balsamic vinegar
- 1/4 C Olive oil
- 2-3 T Tabasco
- 3 cloves Garlic (chopped fine)
- 1/2 C Parsley (chopped fine)
- 1/2 C Cilantro (chopped fine)
- 1/2 C Basil leaves (chopped fine)
- 1 English cucumber (partially peeled)
- 2 pieces Roasted red pepper, (diced)
- 1/2 C Onion (diced)
- 1/2 bunch Scallions (diced)
- 2 lg stalks Celery (diced)
- 1 1/2 Green peppers (cored & diced)
- 1 1/2 Red peppers (cored & diced)
- Salt & pepper to taste

Curry Dip

Combine all ingredients, mixing well
- 1 cup * MAYONAISE
- 1 tablespoon FINELY GRATED onions
- 1 teaspoon garlic salt
- 1 teaspoon curry powder
- 1 teaspoon horseradish
- 1 teaspoon tarragon vinegar
Cindy's Punch

PUT IN GALLON JUGS. FIRST, MIX KOOLAID,SUGAR, AND WATER
- 2 packages UNSWEETENED * CHERRY KOOLAID
- 1 cup sugar
- 2 cups HOT water
- 1 * CAN pineapple juice
- 1 cup lemon juice
- 1 tablespoon * ALMOND FLAVORING
Fried Scallops

PREHEAT OVEN TO 500 DEGREES
- 1/2 cup buttermilk
- 1/2 teaspoon MINCED garlic
- 1/2 cup dry bread crumbs
- 2 tablespoons parsley
- paprika
- 4 WEDGES lemons
- 1 pound scallops
Betty's Fruit Salad Dressing

Mix all ingredients except oil and the three tablespoons of vinegar throughly in blender
- 1 medium onion, grated
- 2 tablespoons paprika
- 1 1/2 teaspoons salt
- 1 1/2 tablespoons white vinegar
- 3 tablespoons white vinegar, (not used in first step)
- 1 egg
- 1/3 cup sugar
- 1 pint salad oil
Carrot Cake

Sift together flour, sugar, baking soda, salt, and cinnamon
- Frosting:
- 2 cups flour
- 2 cups sugar
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 1 1/2 cups cooking oil
- 2 1/2 cups carrots, grated finely
- 4 eggs
- 1 cup nuts
- 1 8 oz. package cream cheese
- 1/2 cup margarine, (do not use butter)
- 1 16 oz. package powdered sugar
- 2 teaspoons vanilla
- Sift together flour, sugar, baking soda, salt, and cinnamon.
- Add cooking oil and beat well. Add carrots, blend in.
- Add eggs, 1 at a time, beating well after each addition.
- Add nuts. Bake at 350 degrees for 40 minutes.
- Beat well cream cheese, margarine, powdered sugar and vanilla. Ice cake.
Broccoli Dip

BOIL BROCCOLI. BROWN ONIONS IN PAN WITH MUSHROOMS
- 1 * PCK BROCCOLLI
- 1 * 8 OZ GARLIC AND HERB CHEESE
- 1 * SMALL DICED onion
- 1 * SM CAN MUSHROOMS
- 1 * CAN CREAM OF MUSHROOM SOUP
- 1 * BOX TRISCUITS
Blackberry Sauce

In small sauce pan, combine preserves,onion, garlic,thyme, and mustard
- 1/2 cup blackberry preserves
- 2 tablespoons onions, finely chopped
- 1 clove garlic, minced
- 1 teaspoon fresh thyme leaves, OR
- 1/4 teaspoon dried thyme, crushed
- 1/4 teaspoon Dijon mustard
- 4 lemon wedges
- fresh thyme, sprigs
- blackberry, fresh, (optional)
Lemon Pie

FOR FILLING, IN A MEDIUM SAUCEPAN COMBINE 1 1/2 CUPS SUGAR, FLOUR, CORNSTARCH AND A DASH OF SALT
- 1 1/2 cups sugar
- 3 tablespoons all-purpose flour
- 3 tablespoons cornstarch
- 3 eggs
- 2 tablespoons MARGARINE OK butter
- 1 to 2 teaspoons FINELY SHREDDED * LEMON PEEL
- 1/3 cup lemon juice
- BAKED * PASTRY SHELL
- 1/2 teaspoon vanilla
- 1/4 teaspoon cream of tartar
- 6 tablespoons sugar
Redneck Caviar

- 2 16 oz. cans black eye peas, drain and rinse
- 1 16 oz. can black beans, drained and rinsed
- 1 16 oz. can niblet corn, drain and rinse
- 1 16 oz. can shoepeg corn, drain and rinse
- 2 4 ounces black olives, drained and chopped
- 2 4 ounces green chili peppers, drained
- 3 jalapenos, chopped
- 1 bunch green onion, chopped
- 1/2 bunch parsley, chopped
- 2 tablespoons garlic, minced
- 1 12 oz. bottle Italian dressing, to taste
- 1 cup tomatoes, chopped
