- 1 1/2 pounds thinly sliced onions
- 2 tablespoons vegetable oil
- 2 ounces medium-dry sherry
- 1 quart chicken stock
- 1 cup demiglace
- 4 each 4 each baguette crouton slices, toasted
- 4 slices Swiss cheese
- 4 teaspoons grated Parmesan cheese
- chopped chives
Broccoli Casserole

HEAT BROCOLLI AND DRAIN. PLACE IN BOTTOM OF CASSEROLE DISH
- 1 package * BROCOLLI PIECES
- 1 * CAN MUSHROOM SOUP
- 1/2 cup MAYBE 3/4 milk
- 1/2 cup GRATED cheese
- 1/2 stick butter
- 1 cup * BISQUICK
Cucumber Salad

DISSOLVE WELL JELLO, WATER, VINEGAR AND ONION
- 1 package * LIME JELLO
- 1 cup HOT water
- 1 tablespoon vinegar
- 1 tablespoon CHOPPED onions
- 2/3 cup CHOPPED cucumbers
- 1/2 cup * MAYONAISE
Greek Chicken Breasts

LIFT skin gently from chicken breasts without detaching it; place 2 garlic cloves under skin of each breast
- 4 chicken breast halves, bone-in
- 8 cloves garlic, crushed
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper, freshly ground
- 2 teaspoons dried oregano
- 4 lemons, thinly sliced
- 16 to 20 Kalamata olives, pitted
- 1 4 ounce feta cheese, crumbled
Bean Soup

RINSE BEANS; PLACE IN LARGE KETTLE
- 2 cups MIxed * BEANS, DRIED
- 2 tablespoons salt
- 2 quarts water
- 2 cups DICED * HAM OR
- * SLICED SMOKED SAUSAGE
- 1 * LG CHOPPED onion
- 1 clove minced garlic
- 1 teaspoon chili powder
- 1 28 oz. can CHOPPED * TOMATOES
- 1 to 2 tablespoons lemon juice
- (USE AT LEAST SEVEN VARIETIES OF BEANS-GREAT NORTHERN, NAVY, BLACK,
- GARBANZO, GREEN SPLIT PEAS, PINTO, AND RED BEANS.)
Dirty Rice

MIX BUTTER AND ONION SOUP WELL
- 1 * STICK OLEO
- 1 package * CREAM OF ONION SOUP
- 1 1/4 cups rice
- 1 * CAN water
- 1 * CAN BEEF CONSUMME'
- 2 to 4 * OZ CAN SLICED MUSHROOMS
Old Fashioned Lemon Pie

Cream butter and sugar together in top of double boiler
- 1 cup sugar
- 2 egg yolks
- 1/2 cup butter, or margarine
- 2 eggs
- 6 tablespoons fresh lemon juice
- 1 to 2 teaspoons lemon rind, grated
- 1 pie shell
- MERINGUE
- 2 egg whites
- 4 tablespoons sugar
Pot Roast and Veggies

MIX SOUP MIX, BROTH, WATER AND MARINATE AND PLACE TO SIDE
- 1 seasoned beef tip roast
- 4 cut up, bite size red potatoes
- 4 cut up, bite size carrots
- 1 sm pkg,whole mushroom
- 1 package onion soup mix
- 1 10 3/4 ounce can beef broth
- 1 10 3/4 ounce can water
- 1 package marinate
Broccoli Salad

MAKE DRESSING USING LAST THREE INGREDIENTS
- 2 stalks (TOPS) * BROCCOLLI
- 7 to 10 slices CRUMBLED bacon
- 2/3 cup raisins
- 1/2 cup PURPLE onions
- 1 to 2 * HANDFULL SHREDDED cheddar cheese
- 1 cup mayonnaise
- 2 tablespoons red wine vinegar
- 1/4 cup sugar
Creole Jambalaya

Saute onions in butter for 5 minutes
- 2 chopped onions
- 1/2 cup chopped green onions
- 4 tablespoons butter
- 1 14 oz. can chopped (reserve liquid) tomatoes
- 1 6 oz. can tomato paste
- 2 ounces water
- 4 cloves chopped garlic
- 2 stalks chopped celery
- 1/4 cup chopped bell pepper
- 2 tablespoons chopped parsley
- 1/4 teaspoon thyme
- 1 bay leaf
- 3 chopped cloves
- 2 pounds peeled, raw shrimp
- 1 pound sausages, cooked, drained, (bulk-hot)
- 3 1/2 cups cooked rice
- 1 1/2 cups cooked and diced chicken
- to taste, salt, pepper, cayenne
- garnish-snipped parsley
