Ingredients

  • 3 tablespoons olive oil
  • 2 cloves MINCED garlic
  • 1 * MED MINCED FINE onion
  • 1/4 teaspoon salt
  • 1/4 teaspoon FRESH CRACKED pepper
  • 4 tablespoons CHOPPED FRESH basil
  • 3 cups FRESH CHOPPED tomatoes
  • 1/2 JUICE lemon
  • 3 * 6-8 0Z FILLETS orange roughy

Preparation

Step 1

SAUTE OIL OVER HIGH HEAT. ADD ONIONS AND GARLIC.
SAUTE UNTIL SOFT. ADD REMAINING INGREDIENTS. SAUTE 5 MINUTES,
REMOVE FROM HEAT AND COOL. STORE IN CONTAINER AND REFRIGERATE.
GRILLING: BRUSH FISH WITH OIL AND LEMON. SPRINKLE SALT PEPPER, DRIED BASIL AND OREGANO OVER FISH.
PLACE FISH ON LIGHTLY OILED GRILL. GRILL OVER COALS 4 - 5 MINUTES PER SIDE UNTIL DONE.
REMOVE FISH. GARNISH WITH TOMATO BASIL SAUCE.
