Ingredients

  • 2 pounds crab meat
  • 1 tablespoon black pepper
  • 2 each 2 each carrots, Diced
  • 4 each 4 each eggs, Hard-Boiled, Finely Chopped
  • 1 each 1 each red bell pepper, Finely Diced
  • 1 each 1 each green bell pepper, Finely Diced
  • 2 stalks celery, Finely Diced
  • 1 each 1 each onion, Diced
  • 1 1/2 cups mayonnaise
  • 1 1/2 tablespoons white wine vinegar
  • 2 tablespoons lemon juice, Freshly Squeezed
  • 1/4 teaspoon white pepper

Preparation

Step 1

Take extra care to remove any shells in the crab meat.
Mix together crab meat, vegetables, eggs and black pepper.
Blend mayonnaise, white wine vinegar, lemon juice and white pepper.
Combine with crab meat mixture until desired consistency. Salt to taste.



Serve with sliced avocados and sliced ripe tomatoes.
