Morning Popovers

Sift salt and flour. Beat eggs
- 2 eggs
- 7/8 cups milk
- 1 cup sifted flour
- 1/4 tsp. salt
- 1/2 tsp. melted butter
Oven-Fried Chicken Thighs

Beat the eggs, ketchup, mustard and milk together and place in a shallow bowl
- For the Coating:
- 8 chicken legs and thighs – skin removed
- Vegetable oil for drizzling
- 2 cups of flour
- 2 eggs
- 1 cup milk
- 2 tablespoons ketchup
- 2 tablespoons mustard
Macaroni and Cheese

This is a very tasty way to serve macaroni and cheese
- 1 – box of your favorite macaroni
- 7 slices of White American cheese – cut up
- 1/2 sweet onion – diced
- 1/2 cup fresh parsley -chopped
- 16 oz. low fat cottage cheese
- 1/2 cup low fat milk
- 2 slices bread – crumbled
- 1/2 cup grated Romano cheese
- 4 pats of sweet butter
Escarole with Spaghetti

Heat a large frying pan with the olive oil
- 1 head of escarole – cleaned and cut
- 5 cloves of garlic chopped
- 1 pint of grape tomatoes – halved
- 3 tablespoons of raisins – chopped
- 1 cup chicken broth
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 tsp. red pepper flakes
- 1 tablespoon honey
- 2 tablespoons olive oil
- 1 lb. of your favorite spaghetti or macaroni
- Fresh grated Romano or Parmesan cheese
Zucchini & Asiago Cheese Panini

Heat a large frying pan with the olive oil and add the sliced zucchini and onion
- For the Cannellini Spread:
- 2 zucchini – sliced lengthwise
- 1 red onion – sliced
- Asiago cheese – sliced
- 2 vine ripe tomatoes – sliced
- Fresh basil leaves
- Dashes of salt and black pepper
- 2 - 3 tbs. olive oil
- Chiabata bread
- 19 oz. can cannellini beans – drained and rinsed
- 2 sun dried tomatoes
- 1/4 cup fresh basil leaves
- 3 cloves of garlic – roasted
- Juice of 1/2 lemon
- 1/4 tsp. red pepper flakes
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 3 – 4 tbs. olive oil
“Light” Bolognese Sauce with Fettuccine

Heat a sauce pot with the olive oil
- 1 pint of grape tomatoes – halved
- 4 cloves of garlic – chopped
- 1 red onion – sliced
- 1 carrot – chopped
- 3 scallions – chopped
- 29 oz. can crushed tomatoes
- 1/4 cup of wine
- 1/2 cup of milk
- 1/4 cup grated Romano or Parmesan cheese
- 2 tablespoons olive oil
- 1 tsp. salt
- 1/2 tsp. red pepper flakes
- 1 tsp. ground oregano
- 1/2 tsp. black pepper
- 1/2 tsp. garlic powder
- 1/4 cup chopped Italian parsley
- Grated Romano or Parmesan cheese
- 1 lb. of fettuccine
Pierogis a la Sobieski Vodka

For the Filling: Let the frozen spinach sit out for about 20 – 25 minutes before using
- For the Filling:
- 10 oz. box of frozen spinach
- 1/2 cup of feta cheese
- 2 cloves of garlic
- 1 cup of chick peas
- 2 tbs. of olive oil
- For the Dough:
- 2 1/2 cups flour
- 1 egg
- 1/2 tsp. salt
- 1/2 c. warm water
- 1/4 cup milk
- 2 tsp. olive oil
- For the Sauce:
- 1 cup of Italian parsley
- 3 – 4 cloves of garlic
- 1 small red onion
- 2 cups of crushed tomatoes
- 1/3 cup of Sobieski Vodka
- 3/4 cup of cream
- 1/4 tsp. red pepper flakes
- 1/2 tsp. black pepper
- 1/2 tsp. salt
- 2 – 3 tbs. of olive oil
- Romano or Parmesan cheese for grating
Greek Style Meatballs and Tomato Sauce

For the Meatballs: Combine all of the above ingredients, except the Feta cheese, in a bowl and mix with your hands
- For the Meatballs:
- 3 1/2 lbs. fresh ground beef
- 4-5 cloves garlic – chopped fine
- 1/2 cup Italian parsley – chopped fine
- 1/2 cup of grated Romano or Parmesan cheese
- 2 eggs
- 1/4 cup milk
- 2 slices white bread – crumbled
- 2 tablespoons olive oil
- 3/4 tsp. salt
- 1/2 tsp. cinnamon
- 1 tsp. sugar
- 2 tablespoons honey
- 1 slice of lemon – with rind – chopped fine
- Feta cheese for garnish
- For the Tomato Sauce:
- 35 oz. can whole peeled tomatoes
- 1 bunch scallions - chopped
- 1 onion – sliced
- 3-4 cloves garlic – chopped
- 1/2 cup Italian parsley – chopped
- 1 slice of lemon – with rind
- 1 tbs. sugar
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. red pepper
- 1/2 tsp. turmeric
- 1/2 tsp. cinnamon
- 1 tsp. dried oregano
- 2 tablespoons olive oil

Preheat Oven 350 degrees: Combine all of the above in a food processor and process
- Sugar Combo for the Topping:
- 1/2 cup raisins
- 1 1/2 oz. dark chocolate
- 5 tablespoons butter

- 1/2 cup brown sugar

- 1/2 tsp. baking soda
- 1 1/2 cups flour

- 1/2 tsp. cinnamon

- 1 tablespoon sugar

- RUB:
- 4 chicken thighs
- 4 chicken legs
- 4 medium to large cloves of garlic, chopped
- 1/2 teaspoon of ground cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon curry powder
- 1/4 teaspoon dried oregano
- 1 teaspoon brown sugar
- 1 tablespoon vinegar
- 1 teaspoon olive oil
