Roast Pork Shoulder

- Stuff into pork:
- 7 1/2 lb. pork shoulder
- 6 cloves garlic – chopped
- 1 bunch of Italian parsley – chopped
- 1/4 cup parmesan cheese
- Rub:
- 1 1/2 tablespoons salt
- 1 tablespoon black pepper
- 1 1/2 tablespoons chili powder
- 1 tablespoon Living the Gourmet Dry Herb Rub
- Juice of 1 lemon
- Drizzle of olive oil
Cluck 'n Moo Cheeseburger Paninis

On your panini griddler or frying pan, cook burgers about 3-5 minutes on each side
- 1 package Cluck 'n Moo Burgers (4 burgers)
- 8 slices of bread (your choice)
- 2 tomatoes, sliced
- 1/2 red onion, sliced
- 4 slices of cheese (use which you prefer, we used White American Cheddar slices)
- Pickles for servings (optional)
Marinated Boneless Pork Slices with Rice

If you like a little sweet and a little spice in your life this meal is for you
- Marinade:
- 3 lbs. sliced boneless pork
- 1 1/2 cups ginger ale
- 2 inch piece of fresh grated ginger
- Juice of 1 lemon
- Zest of 1 lemon
- Juice of 1 lime
- Zest of 1 lime
- 4 cloves of garlic – chopped
- 1/2 cup vinegar
- 1 tsp. ground coriander
- 1 tsp. ground cumin
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 tsp. sugar
- For the Rice:
- 2 cups uncooked rice
- 1 red onion – sliced
- 1 1/2 cups frozen corn
- 1 grilled jalapeño – sliced with seeds
- 4 cloves garlic – chopped
- 1/2 cup dried pineapple
- 1/2 cup dried cranberries
- 2 stalks celery – chopped
- Handful of fresh basil – chopped
- 1/2 tsp. ground coriander
- 1/2 tsp. ground cumin
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/2 tsp. brown sugar
- Olive oil for drizzling
- Combine for the Rice:
- 1 tablespoon sugar
- 1/4 cup vinegar
- Dipping Sauce:
- 1 cup of ketchup
- 1 grilled jalapeño – chopped
- 1 inch piece of fresh ginger – grated
- 2 cloves of garlic – grated
- 1 tablespoon of brown sugar
- Dashes of ground cumin
- Dashes of cloves
- 2 tablespoons of vinegar
Spiced Orange Cake

This cake is moist and soft with a light crunchy coating on top and sweet and spiced oranges on the side
- ORANGE CAKE:
- 1 1/2 cups flour
- 3/4 cup white sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 2 tablespoons confectioner’s sugar
- 4 tablespoons butter
- 1 egg
- 2 tablespoons milk
- Juice of Spiced Oranges (Recipe as follows below)
- Spiced Oranges
- 2 oranges - zested, peeled, chopped
- 1 tablespoon mixed berry marmalade
- 3 tablespoons white sugar
- 1 teaspoon vanilla
- 1 teaspoon ground cinnamon
- Pinch of ground cloves
- CRUMBLE TOPPING:
- 1/2 cup flour
- 1 tablespoon white sugar
- 1/4 cup brown sugar
- 1/4 cup oats
- 4 tablespoons butter
- 1 tablespoon orange zest
- GLAZE:
- 1/4 cup confectioner’s sugar
- 2 teaspoons milk
Sweet Potato Streusel Muffins

- Topping:
- 11/2 cups all-purpose flour
- 3/4 cup cornmeal
- 1/2 cup granulated sugar
- 1/4 cup chopped almonds
- 1/4 cup raisins
- 3 tsp baking powder
- 1 tsp ground nutmeg
- 1 tsp rum extract
- 2 eggs
- 1 cup mashed cooked sweet potato (about 10-12oz.)
- 2/3 cup buttermilk
- 2 tablespoons vegetable oil
- 3 tablespoons packed brown sugar
- 2 tablespoons chopped almonds
- 1 tablespoon butter - softened
Baked Macaroni

This is a nice Friday night dinner
- 2 cups milk
- 8 oz. cheddar cheese – shredded
- 3 tablespoons of butter
- 2 stalks celery – chopped
- 1 bunch of scallions – chopped
- 1 cup of parmesan cheese
- Dashes of black pepper
- Dashes of chili powder
- 1 lb. of your favorite macaroni
Almost Lasagna

For the Sauce: Heat a sauce pot with the olive oil
- For the Sauce:
- 28 oz. can crushed tomatoes
- 4 cloves garlic – chopped
- 1 onion – sliced
- 2 bay leaves
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. red pepper flakes
- 1/4 tsp. dried oregano
- 1/2 tsp. sugar
- 1 cup chicken broth
- 2 tablespoons olive oil
- For Lasagna:
- 2 large zucchini’s – sliced lengthwise with the skin
- 2 1/2 lbs. ground beef
- 6 medium to large potatoes
- Olive oil for drizzling
- 1/2 cup milk
- 1 cup plain yogurt – plus 1/2 tsp. salt, 1/2 tsp. black pepper, 1/2 tsp. cinnamon, juice of 1/2 lemon
- The sauce from the above recipe
- Grated Parmesan or Romano cheese

Hotdogs with Onion and Tomato Relish

- 1/2 tsp. ground cumin
- 1/4 tsp. black pepper
- 1 tablespoon balsamic vinegar
- 2 tablespoons honey
- 1 tsp. brown sugar

Parsley, Onion and Cheese Quiche

- Pie Crust:
- 13/4 cups all-purpose flour
- 1 stick chilled butter
- 2 tablespoons Crisco
- 1/3 – 1/2 cup cold water
- Quiche Filling:
- 8-9 inch pie plate
- 3 large eggs
- Pinches of pepper and nutmeg
- 3/4 cup of grated Monterey Jack Cheese
- 1 1/2 tablespoon butter cut into bits
- 1/2 cup milk, light cream or heavy cream
