“Unique” Stuffed Shells and Tomato Sauce

For the Sauce: Heat a large frying pan with the olive oil; add the chopped onion, carrot and garlic
- For the Sauce:
- 29 oz. can crushed tomatoes
- 3 cloves of garlic – chopped
- 1/4 cup fresh basil – chopped
- 1/2 red onion – chopped
- 1 carrot – chopped
- 3 tablespoons wine
- 1/4 cup chicken broth
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. red pepper flakes
- 1/2 tsp. dried oregano
- 2 – 3 tablespoons olive oil
- Grated Romano or Parmesan cheese
- For the Shells:
- 12 oz. box of jumbo shells
- Filling:
- 16 oz. of cottage cheese
- 2 cloves of garlic
- 1/2 cup Italian parsley
- 1/2 cup sour cream
- 1/4 tsp. red pepper flakes
- 1/2 tsp. salt
- Zest of 1/2 orange
- 2 tablespoons sugar
- 1/4 cup of grated Romano or Parmesan cheese
- 1 cup of shredded - Mozzarella or Monterey Jack cheese for topping the shells
Fresh Spinach & Gorgonzola Dip

Fresh warm blended spinach, mixed with crumbled Gorgonzola is a delicious way to kick-start any summer gathering!
- SPINACH:
- 2 bunches fresh spinach
- 4 cloves garlic
- 1/4 teaspoon salt
- 1/4 teaspoon red pepper flakes
- 2 tablespoons olive oil
- DIP:
- Drained spinach
- 4 ounces gorgonzola cheese
- 1/4 cup parmesan cheese
- Juice of 1/4 lemon
- 1/4 teaspoon red pepper flakes
- 1 clove garlic
- 1 tablespoon honey
Curry-Ginger Pork Chops with Balsamic Fennel

- 1/2 cup apricot preserves
- 4 tablespoons curry powder
- 4 tablespoons grated peeled fresh ginger
- 1 tablespoon olive oil
- 1/2 tsp black pepper
- 6 pork chops
- 2 bulbs of fresh fennel – sliced
- Balsamic vinegar – for drizzling
Roasted Red Pepper Salad Dressing

You control with thickness of this dressing with the amount of liquid from the marinades
- 16 oz. sour cream
- 2 tablespoons vinegar
- 1 tablespoon capers – plus a dash of caper marinade
- Small handful of fresh dill
- 2 cloves fresh garlic
- 4-5 slices of sweet marinated roasted red pepper – plus a little of the marinade
- 3-4 tablespoons of marinated hot cherry peppers – plus a little of the marinade
- Dash of salt
- Dash of black pepper
- Dash of red pepper flakes
- 2 tablespoons of honey
- Drizzle of olive oil
Banana Apple Loaf

Preheat over to 350 degrees F
- Cinnamon Icing Drizzle:
- 3 ripe bananas
- 1 apple, diced
- 1/4 cup raisins
- 1/2 cup oats
- 1/2 cup white sugar
- 1/4 cup brown sugar
- 1 egg
- 4 tablespoons canola oil
- 1 1/2 cups self-rising flour
- 1/2 cup confectioner's sugar
- 2 teaspoons whole milk
- Dash of cinnamon
Corn Salad

For Corn: Thaw the corn in a colander over a large bowl
- Dressing:
- 16 oz. frozen corn
- 1 jalepeno – diced with seeds
- 2 cloves garlic – chopped
- 1 large onion – sliced
- 1 tbs. butter
- 1/4 cup fresh Italian parsley – chopped
- Zest of 1 lime
- Ground cumin
- Salt
- Pepper
- Juice of 1 lime
- 1 tbs. balsamic vinegar
- 1/2 tsp. salt
- 1/2 tsp. black pepper
Apple Custard Pie with Oatmeal Crust

This is a simple and delicious dessert
- Crust:
- 1 cup oats
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar
- 1/4 tsp cinnamon
- 4 tablespoons butter – softened
- Filling:
- 2 eggs
- 1/4 cup sugar
- 1/2 tsp vanilla extract
- 3/4 cup milk
- 3 apples – peeled & cut into wedges
- 1/4 tsp cinnamon
- Topping:
- 1 tablespoons flour
- 1 tablespoons brown sugar
- 1 tablespoons sugar
- 1 tsp cinnamon
Cranberry-Cheesecake Tart (Adapted from Pillsbury Annual Recipes-2009)

- Ingredients for Crust:
- 2 1/2 cups all-purpose flour (sifted)
- 2 tablespoons sugar
- 11/2 sticks sweet butter
- 1/4 cup all-vegetable shortening (8 tbsp)
- 6-8 tablespoons ice water
- Filling:
- 1 – 16 oz. whole berry cranberry sauce
- 1/4 cup chopped pecans or walnuts (chopped)
- 6 tablespoons sugar
- 1 tablespoon corn starch
- 1 – 8 oz. package cream-cheese
- 1/3 cup sugar
- 1 egg
- Topping:
- 1 cup sour cream
- 2 tablespoons sugar
- 1 tsp. vanilla
Stuffed Boneless Pork Chops

This is a nice dinner for a special occasion and of course that may be any occasion you like
- STUFFING:
- 6 boneless pork chops, cut from a boneless pork loin about one inch thick.
- 1 cup milk
- 1 cup cornmeal
- 1/2 cup flour
- Chili powder, to taste
- Salt, to taste
- Black pepper, to taste
- Garlic powder, to taste
- Vegetable oil
- 1 bunch fresh basil
- 8 garlic cloves
- 1/2 cup parmesan cheese, grated
- 2 tablespoons sun dried tomatoes
- 2 tablespoons capers
- 10 pimento olives
- Olive oil, for drizzling
Stuffed Bell Peppers

This is a delicious dish served with a nice side salad
- For the Stuffing:
- 6 bell peppers
- 5 cloves garlic – chopped
- 15 oz. can of red beans – drained
- 2 tablespoons - raisins
- 1 jalapeño pepper - diced
- 2 carrots – diced
- 1 bunch scallions – chopped
- Healthy handful of Italian parsley – chopped
- 1 1/2 lbs. ground beef
- 6 slices of bread
- 28 oz. can of crushed tomatoes
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp chili powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 2 cups chicken broth
- Olive oil
- Grated Parmesan cheese
