- For Dressing :
- 1 small sweet onion
- 4 cloves garlic
- 3 sprigs of mint
- Zest of 1 lemon
- Juice of 1/2 lemon
- 4 tablespoons vinegar
- 1 tablespoon sugar
- 3/4 cup milk
- 1/2 cup mayonnaise
- 1/2 tsp. salt
- 1/2 tsp. black pepper

- BROWNIE CUPCAKES:
- 1 box dark chocoalte brownie mix
- 1 cup all-purpose flour
- 1 egg
- 1/3 cup oil
- 1/4 cup milk
- 1/4 cup sour cream

- 1 cup pumpkin puree
- 1/4 cup apple sauce
- 1/4 cup brown sugar
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg

- 1/4 cup grated Parmesan cheese
- 1 cup Monterey Jack cheese – grated
- 1 1/2 cups milk

- 9 oz. package of frozen chopped spinach

Spaghetti Sauce with Peas and Mushrooms

- 29 oz. can of crushed tomatoes
- 4 cloves of garlic – chopped
- 1/2 cup of fresh basil or Italian parsley – chopped
- 1 small red onion – sliced
- 1 quart of button mushrooms – sliced
- 1 cup of frozen peas
- 1/4 cup of chicken broth
- 1/2 tsp. red pepper flakes
- 1/2 tsp. black pepper
- 1 tsp. dried oregano
- 1 tsp. salt
- 1/4 cup grated Romano or Parmesan cheese
- Pinch of sugar
- 2 tablespoons of olive oil
- 1 tablespoon of butter
- 1 lb. of your favorite spaghetti
Oven Baked Chicken with Veggies

- 6 chicken thighs and legs – skinned
- 1 cup all-purpose flour
- 1 onion – sliced
- 3 green bell peppers – sliced
- 4 cloves of garlic – crushed & chopped
- 3 zucchini – sliced
- 3/4 cup chicken broth
- 1 tsp smoked paprika
- 1 tsp paprika
- 1 tsp dried oregano
- 1 tps chili powder
- Olive oil

Baked Boneless Pork Chops with Sauce

- 5 - Boneless pork chops (about 1 inch thickness)

- Dashes of black pepper

- 1 large onion – sliced
- 2 cups frozen peas
- Dashes of salt
- Dashes of black pepper
- Dashes of ground oregano
- Dashes of garlic powder
- Pinch of sugar
- Dashes of chili powder
- Healthy handful of fresh basil – chopped
- 2 stalks celery – chopped
- 1 1/2 cups fresh bread crumbs
- Grated Romano or Parmesan cheese
- Olive oil for drizzling
Artichoke & Red Bean Dip with Bread Crisps

- 1 1/2 cups of red kidney beans - drained
- 4 cloves of garlic

Naked Chocolate Cake: Preheat oven to 350 degrees F
- Naked Chocolate Cake:
- 1 cup sifted all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 cup vegetable oil
- 1 cup sugar
- 1/3 cup brown sugar
- 1 teaspoon vanilla
- 3 eggs
- 1/2 cup buttermilk or sour milk (For sour milk mix 1/2 cup milk and 1 teaspoon vinegar and let stand about 5 minutes)
- 1/4 cup dark chocolate chips
- Strawberry Jam:
- 1/2 cup frozen strawberries
- 3 tablespoons sugar, divided
- Fresh Whipped Cream:
- 1 cup heavy cream
- 1 tablespoon confectioner's sugar
- More confectioner’s sugar for dusting
