Spaghetti with Zucchini and Anchovies

This is a perfect Friday night dinner
- 1 lb. of your favorite spaghetti
- 3 zucchini’s – sliced (with or without skin)
- 1 onion – sliced
- 3 vine ripe tomato’s – quartered
- 4 cloves of garlic – chopped
- 2 oz. can of anchovies – in oil
- Handful of Italian parsley – chopped
- Handful of fresh basil – chopped
- 1 cup of chicken broth
- Juice of 1 lemon
- Dashes of salt
- Dashes of black pepper
- Dashes of red pepper flakes
- One cup of croutons
- Grated Romano cheese

- STUFFING:
- 8 chicken legs, with skin
- juice of 1 lime
- 1 cup cilantro or Italian parsley
- 2 garlic cloves
- 1 teaspoon sugar
- 1/2 teaspoon cumin
- 1/2 teaspoon turmeric
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 teaspoon coriander
- 3 tablespoons olive oil
Strawberry Cake

CAKE: Preheat oven to 325 degrees F
- For Vanilla Strawberry Cake:
- 2 cups self-rising flour
- 1 cup sugar
- 1/2 cup canola oil
- 2 eggs
- 1 tablespoon vanilla
- 1/2 cup milk
- 1/4 cup homemade strawberry jam
- For Strawberry Jam:
- 2 cups fresh strawberries
- 1/2 cup sugar
- 2 tablespoons cornstarch
- For Strawberry Frosting:
- 2 cups confectioner's sugar
- 1 teaspoon vanilla
- 1/2 of a (5.3 oz) container of Greek yogurt with strawberry fruit at the bottom
- 3 tablespoons unsalted butter
- 1-2 teaspoons of milk
Grilled Chicken with Anise

For Chicken Breast: Combine the ingredients for the rub in a small bowl
- Rub for the Chicken Breast:
- 2 lbs. boneless chicken breast
- 1 head of Anise - quartered
- 2- 3 tbs. olive oil
- 1/2 tsp. salt
- 1/2 tsp. garlic powder
- 1/2 tsp. black pepper
- 1/2 tsp. paprika
- 1/2 tsp. dried oregano
- For the Anise:
- 1/4 - 1/2 tsp. salt
- 1/4 - 1/2 tsp. pepper
- 1 – 2 tbs. olive oil
- Grated Romano or Parmesan cheese
Lightened Up - Crustless Cottage Cheese Quiche

This waist friendly crustless quiche is amazing! Perfect for anytime, lunch, brunch, or even a light dinner
- 4 eggs
- 1 cup milk
- 1/2 red onion, sliced
- 16 ounces low fat cottage cheese
- 1 cup French style frozen green beans
- 1/4 cup Parmesan or Romano cheese, grated
- 1/4 cup fresh Italian parsley, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
Bone-In Rib End Pork Roast with Fresh Tortilla’s and Cabbage Salad

For Pork Roast: Combine all of the above ingredients and rub all around the roast
- For Pork Roast:
- 4-5 lb. pork roast
- For the Rub:
- 2 tbs. sugar
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. turmeric
- 1 tsp. ground cumin
- 1/4 tsp. cayenne
- 1/2 tsp. curry
- 1/4 tsp. ground cloves
- 1/2 tsp. cinnamon
- For the Tortilla:
- 2 cups flour
- 1/2 tsp. salt
- 1 tsp. baking powder
- 1 tbs. shortening
- 3/4 cup warm water
- For the Cabbage Salad:
- 1/2 head of curly cabbage – sliced thin
- 1/2 small red onion – sliced thin
- 1 cloves of garlic – crushed and chopped
- 1 inch piece of fresh ginger – sliced thin
- 1/4 jalapeño – chopped with seeds
- Combine all of the above in a salad bowl and toss.
- For the Dressing:
- 1/4 cup of water
- 3 tablespoons of olive oil
- 3 tablespoons of white vinegar
- 1/2 tsp. salt
- 1 tsp. sugar
- 1/2 tsp. black pepper
- Combine all of the above in a small bowl and mix.
- Pour over the salad and toss.
Strawberry & Chocolate Brownies

n a small saucepan, boil down strawberries and 2 tablespoons of sugar for homemade jam
- Strawberry & Chocolate Brownies:
- 1/2 cup chocolate (I used left over chocolate candies, otherwise just a break a bar down until you have about 1/2 cup)
- 1 tablespoon butter
- 2 tablespoons canola oil
- 1/2 cup white sugar
- 1/2 cup dark brown sugar
- 2 eggs
- 1/4 cup strawberry jam (recipe as follows)
- 1 cup flour
- 1/4 cup dark chocolate chips
- 1/4 cup dried cranberries
- Homemade Strawberry Jam:
- 1/2 cup fresh or frozen strawberries
- 3 tablespoons of sugar, divided
Crispy Baked Potato Fries

Preheat oven to 400 degrees F
- 6 Russet Potatoes, cleaned, skinned and sliced into 1/4-inch slices
- 2 tablespoons cornstarch
- 1/4 cup cornmeal
- Salt & Favorite Seasonings
- 3 tablespoons vegetable oil
Crepes with Fresh Pears

- For the Crepes:
- 1 cup flour
- Pinch of salt
- 3 eggs
- 2 tablespoons melted butter
- 1 cup milk
- For the Filling:
- 6 pears – peeled and quartered
- 1/2 cup of walnuts – chopped
- 1 cup of pitted dates - chopped
- Dashes of nutmeg
- Dashes of ground cloves
- Dashes of ground cinnamon
- 1 tablespoon of brown sugar
- Zest of 1/2 lemon
- Juice of 1/2 lemon
- 1 tablespoon of sugar
- 1 lb. of cottage cheese
Boneless Pork Strips

- Rub:
- 3 lb. bones pork loin – sliced thin
- 3/4 tbs. cinnamon
- 3/4 tbs. ground cloves
- 1 tsp. ground cumin
- 1 tsp. ground curry
- 3/4 tsp. salt
- 1/2 tsp. ground black pepper
- 1 tsp. instant coffee
