Chicken Meatballs with Red Sauce and Spaghetti

Preheat Oven 350 degrees: Place in a food processor the chick peas, parsley, garlic and seasonings and process
- 3 lbs. of boneless chicken breast
- 1 cup chick peas
- 1 cup Italian parsley
- 2 cloves garlic
- 3 tablespoons olive oil
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. turmeric
- 3/4 cup corn meal
- Vegetable oil
Basil, Apple, Cheese & Honey Omelet

Start the day right with a Basil, Apple, Cheese and Honey Omelet
- 6 to 7 eggs, beaten with a splash of milk
- 3 to 4 apples, peeled and sliced
- 1 cup cheese, shredded
- 3 to 4 tablespoons of honey, plus more for drizzling
- 5 to 6 fresh basil leaves, sliced thin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Olive oil
Italian Style Pork Burgers

These are a delicious burgers with your favorite toppings
- 3 lbs. of boneless pork loin
- 4 cloves of garlic
- 5 pieces of sun dried tomato
- 1/4 cup grated Romano cheese
- 1 tsp. salt
- 1 tsp. black pepper
- Zest of 1/2 lemon
- 1 tsp. of dried oregano
- Olive oil
Grilled Fried Chicken Panini

- 2 Boneless and Skinless chicken thighs
- All-purpose flour
- Canola oil
- 1/2 lb. Deli ham slices
- 1/2 lb. Deli Swiss cheese
- 1 sliced fresh tomato
- Mezzetta Tri-color Roasted Sweet Bell Pepper Strips
- Mezzetta Hot Cherry Peppers
- Butter
- 4 slices European style bread
Cranberry Upside-down Muffins

- 3/4 cup whole cranberry sauce
- 1/4 cup brown sugar
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 3 tsps baking powder
- 1 cup milk
- 1/4 cup vegetable oil
- 1 tablespoon grated orange peel
- 2 egg whites
Eggplant Salad

Preheat Oven 350 degrees: Set up two shallow bowls one with the egg-wash and one with the flour
- For the Eggplant
- 2 eggplants – sliced
- 3 eggs – beaten plus splash of water
- 1 1/2 cups flour
- Drizzle of vegetable oil
- For the Salad
- 2 stalks celery – chopped
- 3-4 cloves of garlic – chopped
- 1 tomato – diced
- 1/2 cup of Italian parsley – chopped
- 1 red onion – sliced
- 15 oz. can of black beans – drained
- 1/2 tsp. red pepper flakes
- 1/2 tsp. salt
- 1/2 tsp. dried oregano
- 1/2 tsp. black pepper
- Parmesan or Romano cheese for grating
- Juice of one lemon
- 3-4 tablespoons of olive oil
Blueberry and Basil Pancakes with Ginger and Lemon Zest Syrup

This is a great way to start your day or serve this as a light supper
- For the Blueberries:
- 2 cups self-rising flour - sifted
- 1 tablespoon sugar
- 2 eggs – lightly beaten
- 2 cups milk
- 1/4 cup melted butter
- 1 cup blueberries
- 2 tablespoons brown sugar
- Zest of 1/2 lemon
- Handful of fresh basil – chopped
- For the Syrup:
- 1/2 inch piece of fresh ginger – grated
- Zest of 1/2 lemon
- Juice of 1/2 lemon
- Small handful of fresh basil - chopped
- 1 tablespoon brown sugar
- 1/2 cup of maple syrup
- 2 tablespoons honey
Corn Salsa

Combine all of the above ingredients in a bowl
- Dressing:
- 5 ears of fresh corn – quick boil and sliced from the cob
- 1 vine ripe tomato - diced
- 1/4 red onion - chopped
- 1 clove of garlic – chopped
- 1 stalk of celery – chopped
- 1/2 cup of fresh basil – chopped
- 1 sweet pickle – chopped
- 1/2 jalapeño – chopped with seeds
- 1/2 bell pepper – chopped
- 1/4 cup vinegar
- 1 tsp. sugar
- 1/2 tsp. salt
Cranberry Upside-down Muffins

- 3/4 cup whole cranberry sauce
- 1/4 cup brown sugar
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 3 tsps baking powder
- 1 cup milk
- 1/4 cup vegetable oil
- 1 tablespoon grated orange peel
- 2 egg whites
Chicken Burgers with Spiced Rub

For the Burgers & Rub Combine all of the ingredients for the rub in a medium sized bowl and set aside
- 4 lbs. boneless-skinless chicken breast – cubed
- For the Burgers
- 2 – 3 tbs. sun dried tomatoes – chopped
- 2 cloves garlic – chopped
- Juice and zest of 1 lemon
- 1/4 cup cilantro – chopped
- 1 tsp. salt
- 1 tsp. black pepper
- 1/2 cup Romano or Parmesan cheese – grated
- 1 scallion – chopped
- 1 tbs. olive oil
- For the Rub
- 1 tsp. paprika
- 1 tsp. salt
- 1 tsp. black pepper
- 1 tsp. garlic powder
- 1 tsp. chili powder
- 1 tsp. ground oregano
- 1 tsp. ground cumin
- Honey Mustard Dressing for the Salad Greens
- 2 – 3 tablespoons smooth mustard – your favorite
- 2 tablespoons balsamic vinegar
- 2 – 3 tablespoons honey
- 1/4 tsp. salt
- 1/4 tsp. black pepper
