Oven-Baked Fried Chicken Cutlets

Preheat Oven 350 degrees: Combine the flour, cornmeal and seasonings in a shallow bowl
- For the Coating:
- 2 – 3 lbs. chicken cutlets
- 2 cups milk
- 1 cup flour
- 1 cup cornmeal
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. garlic powder
- 1/4 tsp. paprika
- Drizzle of vegetable oil
Southwest Style Macaroni

Heat a large frying pan with the olive oil
- 6 oz. can of black olives – chopped
- 16 oz. jar of salsa
- 15 oz. can black beans – drained
- 29 oz. can of crushed tomatoes
- 1 jalapeño – chopped with seeds
- 1 large onion – sliced
- 4 cloves garlic – chopped
- 1 cup of frozen peas
- 1 tsp. salt
- 1 tsp. black pepper
- 1 1/2 tsp. ground cumin
- 1 tsp. curry
- 1/2 tsp. red pepper flakes
- 1/2 tsp. garlic powder
- 16 oz. of shredded cheese - your choice
- 2 tbs. olive oil
- Grated Romano or Parmesan cheese
- 1 lb. of your favorite macaroni
Spinach Soup

This is a simple and satisfying soup to have on a cold fall evening
- 1 bunch fresh spinach
- 2 tablespoons olive oil
- 1 pouch instant barley
- 4 cloves garlic (chopped)
- 1/2 red onion (sliced)
- 1/4 tsp red pepper flakes
- 1 cup favorite macaroni
- 4 cups chicken broth
- 1/4 tsp cornstarch
- 1 egg
- Romano cheese for garnish

- 3 stalks of celery – sliced
- 1/2 onion – sliced
