Layer Banana Cake

This is yet another way to use those bananas that have seen younger days
- 1/4 cup butter
- 1 cup sugar
- 1 tsp. vanilla
- 3 cups flour – sifted
- 2 eggs
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 3 bananas – sliced into round discs
- 1 cup milk
- 1/2 cup sugar plus 1 tablespoon cinnamon
Creamy Hummus Dip

A quick and healthy party dip that is sure to wow the crowd at your next summer gathering!
- 15oz. can chick peas – drained
- 8 oz. yogurt
- 1 roasted jalapeño – with seeds
- 3-4 cloves garlic – roasted
- 1/2 tsp. salt
- 1/4 tsp. red pepper flakes
- Juice of 1 lime
- 3-4 tbs. olive oil
Boneless Pork Wrap

For the Pork: Heat a heavy sauce pot with one tablespoon of olive oil; add the pork; with the heat on low
- For the Pork:
- 2 lb. boneless pork
- Juice of 1/2 lemon
- 1/4 cup fresh Italian parsley - chopped
- Salt/Pepper
- 3 tbs. olive oil
- Fresh Cabbage Slaw:
- 1 small head cabbage – sliced thin
- Zest of 1 lime
- 1 tsp. sugar
- Paprika
- Salt/pepper
- 2-3 tbs. vinegar
- For the Wrap:
- Mozzarella cheese – shredded
- Mazzeretta – tri-color roasted sweet bell pepper strips
- Mazzeretta – hot cherry pepper
- Fresh Flour Tortilla Wrap
Warm Macaroni and Veggie Salad

Preheat Oven 350 degrees: Place the peppers on a pan in the oven and roast for 20 - 25 minutes
- 2 roasted red peppers – sliced
- 1 bunch of scallions – chopped
- 3 cloves of garlic - chopped
- 3 plum tomatoes – blanched and chopped
- 1/2 cup chopped olives
- 1/2 cup fresh basil – chopped
- 1/2 tsp. salt
- 1/4 tsp. red pepper flakes
- 1/2 tsp. dried oregano
- 1 lb. of your favorite macaroni
- Grated Parmesan or Romano cheese
- Olive oil
Marinated Boneless Center Cut Pork Loin

Combine all of the ingredients for the marinade in a bowl and form a paste
- Marinade:
- 3 lb. center cut pork loin
- 2 cloves of garlic – chopped
- 1 tsp. salt
- 1 tablespoon ground cumin
- 1 tsp. ground oregano
- 1 tsp. curry powder
- 1 tablespoon paprika
- 1 tablespoons brown sugar
- Zest of 1 lime
- Juice of 1 lime
Blueberry & Orange Scones

- For the scones you will need:
- 2 cups AP flour
- 1 teaspoon baking powder
- 1/2 cup white sugar
- 5 tablespoons unsalted cold butter, cubed
- 1 cup frozen (or fresh) blueberries

- 1/2 cup whole milk, plus more for brushing scones

- 1 small red onion – diced
- 1/4 cup Jack Daniel’s Single Barrel Whiskey
- 1/4 cup brown sugar
- 1 cup ketchup
- 1/2 cup water
- 1 tablespoon molasses
- 2 tbs. vinegar
- 1/2 tsp. salt

- 5 red bell peppers
- 1 jalapeño pepper
- 4 cloves garlic - chopped
- 1 large onion - sliced
- 2 tablespoons wine
- 1/2 tsp. red pepper flakes
- 1/2 tsp. black pepper
- 1 tsp. dried oregano
- 1 tsp. salt
- 2 tablespoons sugar
- 1 tablespoon vinegar
- 29 oz. can of crushed tomatoes
- 1 lb. of your favorite spaghetti
- Grated Romano or Parmesan cheese for grating
- 2 carrots, diced
Easter Carrot Cake

- Frosting:
- 3/4 cup granulated sugar
- 1 cup brown sugar
- 3/4 cup corn oil
- 1 tablespoon vanilla
- 4 eggs
- 2 cups self-rising flour
- 1 teaspoon ground cinnamon
- 3 1/2 cups shredded carrots
- 1/4 cup raisins – chopped
- 1/4 cup chocolate chips - chopped
- 1/4 cup milk
- 8 ounces cream cheese
- 4 tablespoon unsalted butter
- 1 cup confectioners’ sugar
- 1 teaspoon vanilla
- 1/2 cup shredded coconut – toasted
