Creamy Potato Salad

This salad easy to prepare and great potato salad for any event
- 4 -5 lbs. of potatoes
- 3 stalks of celery – sliced with leaves
- 1/2 cup marinated sweet peppers - sliced (reserve 2-3 tablespoons of the marinade)
- 1/2 grilled jalapeño – sliced with seeds
- Juice of 1 lime
- 3 heaping tablespoons of mayonaise
- 1/2 tsp. salt
- 1/4 tsp. black pepper
Dill Potato Salad

This is a perfect summer potato salad
- 4-5 lbs. of potatoes
- 3 stalks of celery – sliced thin
- 3 cloves of garlic – chopped fine
- 1 tablespoon of capers – chopped
- 1 tablespoon of caper juice
- 1/4 red onion – chopped
- 1 handful of fresh dill – chopped fine
- Juice of 1/2 lemon
- Salt to taste
- Dashes of black pepper to taste
- Drizzles of olive oil
Blueberry Blitz

Combine all of the above in a food processor and process
- 2 cups blueberries - frozen
- 1 cucumber – peeled
- 1/4 cup fresh basil
- 1 cup coconut milk
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 1 tsp. Jamaican Curry
- 2 oz. Sobieski Vodka
- 1 inch piece fresh ginger, peeled
Chicken Parmesan

This is a pleasing satisfying dish with a nice salad and bread and the leftovers are always welcome
- For the Tomato Sauce:
- 3 lbs. boneless chicken breast – sliced thin
- 1/2 cup flour
- Dashes of salt
- Dashes of black pepper
- Dashes of Chili powder
- Dashes of garlic powder
- Olive oil – for drizzling
- 8 oz. shredded Monterey Jack cheese
- Grated Romano cheese
- 29 oz. can of crushed tomatoes
- 3 stalks celery – chopped
- 4 cloves of garlic – chopped
- 1 cup chicken broth
- 1 bunch of scallions – chopped
- 1/2 large onion – sliced
- Juice of 1 lemon
- 1 tsp sugar
- Handful of fresh basil – chopped
- Dashes of salt
- Dashes of black pepper
- Dashes of red pepper flakes
- Dashes of ground oregano
- Olive oil – for drizzling
Mint Coffee Frosty

Combine all of the above in a blender or food processor and process until frosty
- 1 1/4 c. black coffee
- 24 ice cubes
- 1 tsp Nielsen Massey Vanilla
- 1 tsp. Nielsen Massey Chocolate Extract
- 1/4 cup sugar
- 4-5 fresh mint leaves

- 8 chicken thighs

- 4 cups water
- 3 tbs. salt
- 1 tbs. ground black pepper
- 2 bay leaves
- 2 cloves garlic
- 1 tsp. paprika
- 1 tbs. lemon juice
- 1 tsp. vinegar
Grilled Chicken Strips with Orzo Salad

- Orzo Salad:
- 1 lb. of orzo
- 6.5 oz. jar of marinated artichoke hearts
- 3 bunches of fresh scallions – chopped
- 4 cloves of garlic – chopped
- Healthy handful of fresh Italian parsley – chopped
- 3 vine ripe tomatoes – sliced
- Handful of fresh basil – ripped
- 1/4 lb. of bacon - sliced
- Olive oil
- 1 pat of butter
- 2 stalks of celery – sliced
- Dashes of red pepper flakes
- Dashes of salt
- Romano cheese for serving
- Grilled Chicken Strips:
- Ingredients:
- 3 lbs. of boneless chicken breast – sliced thin
- Marinade:
- 1 tbs. - ground curry
- 2 tbs. - brown sugar
- 1 tbs. - ground cumin
- 1/2 tsp. - salt
- 1/2 tsp. - black pepper
- 1/2 tsp. – chili powder
- 2 tbs. – vinegar
- 1 tbs. lime juice
- Drizzle of olive oil
- Honey Mustard Dipping Sauce:
- 3 tbs. - mustard
- 2 tbs. – honey
- 1 tbs. – lime juice
- 1 tsp. - balsamic vinegar
A Stay in “Take-Out” Dinner

This is a great way to have “take out” without the cost
- 2 cups uncooked rice – plus a dash of turmeric in the water
- 1 inch piece of fresh ginger – chopped fine
- 3 eggs – slightly beaten
- 2 stalks celery – chopped
- 2 carrots – sliced thin
- 4 cloves of garlic – chopped
- 1/2 red onion – sliced thin
- 1 cup frozen peas
- 1 grilled jalapeño - chopped
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 2 tablespoons soy sauce
- 2 tsp. sesame oil
- 1 tablespoon fish sauce
- Drizzle of olive oil
Roasted Pepper Halves with Bread Crumbe Topping Peperoni Arrostiti
