Pork Roast

This combo of flavors turned out great, the pork was moist and delicious
- Dressing and Marinade:
- 1 – 8 lb pork rib roast
- 1 – Large handful of fresh cilantro – chopped
- 1 – Large handful of fresh parsley – chopped
- 4 cloves of garlic – chopped
- 1 tsp. of instant coffee
- 1 tablespoon of honey
- 1 tsp of brown sugar
- Dashes of ground cumin
- Dashes of cinnamon
- Dashes of sea salt
- Dashes of fresh ground black pepper
- Juice of 1/4 of a lemon
Cannellini Bean Dip

Combine all of the above ingredients in a food processor and process until smooth
- 29 oz. can of cannellini beans – drained
- 1 green tomato
- 1 samll jalapeño – with seeds
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/4 cup fresh basil
- 1/4 cup fresh Italian parsley
- 3-4 tablespoons olive oil
Citrus Chicken Thighs with Mustard Vinaigrette

For the Chicken & Marinde: Preheat oven to 350 degrees F
- For the Chicken:
- 10 chicken thighs – with bone and skin
- Dashes of salt
- Dashes of black pepper
- 3 - tablespoons canola oil
- For the Citrus Marinade:
- Juice and zest of 1 orange
- 2 sprigs rosemary, chopped
- 1 teaspoon fresh chili paste
- 1 tablespoon Teriyaki sauce
- 1 teaspoon soy sauce
- 1 teaspoon sugar
- 1 teaspoon vinegar
- 3 cloves garlic, grated
- For the Salad:
- Your favorite salad greens for the salad.
- Vinaigrette:
- 2 tbs. smooth mustard
- 3 tbs. white vinegar
- 2 tbs. balsamic vinegar
- 1 garlic clove
- 1 inch piece of fresh ginger
- 1/2 small red onion
- 3 tbs. water
- 4 tbs. olive oil
- 1 tsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. black pepper
Simple Banana Bread

Preheat Oven 350 degrees: In a mix-master combine the bananas, butter and the sugars and mix on low

- 1 cup sugar
- 1 cup brown sugar
- 4 tablespoons butter
- 3 eggs
- 1 tsp. baking powder
- 1 tsp. baking soda
- 2 cups flour
- 1/2 cup chocolate cookie crumbs – (or vanilla cookies, the choice is yours)

- 12 pieces of chicken (legs and thighs)
- 6 pieces of hot sausage
- 4 cloves garlic
- 3 stalks of celery
- 1/2 a cup of cilantro
- 1/2 a cup of parsley
- 1 bunch of scallions
- juice of 1/2 lemon
- 2 tablespoons vinegar
- 1/4 a cup of honey
- 1/4 cup of ketchup
- 1/2 a jalapeno, no seeds
- 1 cup cherry tomatoes
- 1 tablespoon Living the Gourmet Dry Herb Rub
- 1 tablespoon Signature Spice Mix
- Preheat oven to 350 degrees.
- -For the Orzo and Chickpeas-
- Orzo and Chickpeas
- 1 box orzo
- 1 cup parsley
- 4 cloves of garlic
- juice of 1/2 lemon
- 1/4 teaspoon red pepper flakes
- 1 tablespoon Living the Gourmet Dry Herb Rub
- 1/4 cup olive oil
- 1-1 lb. 13 oz can chickpeas.
Fresh Tomato Sauce with Grilled Veggies and Macaroni

This is a great way to use garden veggies and have a nice Sunday dinner
- For the Sauce:
- 3 lbs. fresh tomatoes
- 1/2 onion
- 5 cloves of garlic
- Handful of fresh basil
- Salt
- Black pepper
- Dried oregano
- Red pepper flakes
- Olive oil – for drizzling
- 1 lb. of your favorite macaroni
- Romano cheese for grating
- For the Veggies:
- 2 red bell peppers – sliced
- 3 zucchini – sliced
- 1 sweet onion – sliced
- Salt
- Pepper
- Olive oil
Roasted Chicken

- For the Rub:
- 5 lb. whole chicken
- 3 tablespoons butter
- 1 tsp. ground coriander
- 1 tsp. ground curry
Spaghetti with Fresh Zucchini

Heat a large frying pan with 3 tbs
- 14.4 oz. of frozen baby peas
- 3 – 4 large zucchini – quartered and sliced
- 3 vine ripe tomatoes – diced
- 1/4 cup fresh basil – chopped
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. dried oregano
- 1/4 tsp. red pepper flakes
- 1/2 red onion – sliced
- 2 cloves garlic – chopped
- 3 – 4 tbs. olive oil – plus more for drizzling
- Fresh grated Parmesan cheese or Romano – plus shavings of cheese
- 1 lb. of your favorite spaghetti
BBQ Mac and Cheese

Prepare the macaroni as directed
- 1 cup cottage cheese
- 1/2 cup Parmesan cheese
- 1/2 cup ketchup
- 1 tsp. brown sugar
- 1/2 jalapeño
- 1/2 cup Italian parsley
- 1 1/4 cup milk
- 3 cloves garlic
- 1 onion – diced
- 3/4 tsp. ground cumin
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 2-3 tbs. butter
- 1 cup cheddar cheese shredded or your favorite
- 1/4 cup Italian style breadcrumbs or homemade breadcrumbs
- 1 lb. of your favorite macaroni
Balsamic – Currant Muffins

Preheat Oven 350 degrees: Combine the milk and vinegar and let sit until ready to use
- For Balsamic – Currant Filling:
- 1 1/2 cups flour
- 1/2 tsp. salt
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 5 tablespoons butter
- 3/4 cups sugar
- 1/2 cup sour milk – (milk plus 1 tps. Vinegar or lemon juice – let milk sit a minute)
- 1 egg
- 1/2 cup currants (or raisins)
- 1 tablespoon balsamic vinegar
- 1/4 cup brown sugar
- Sugar Topping:
- 1 tablespoon sugar
- 1 tablespoon brown sugar
