Pork Chops and Rice

Brown pork chops in hot oil in cooker
- 8 Pork chops -- cut 1/2 inch thick
- 2 tablespoons oil
- 2 cups rice -- uncooked
- 4 cups tomatoes -- canned
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1/2 teaspoon chili powder
- 4 tablespoons onion -- chopped
- 6 tablespoons green pepper -- chopped
- 2 cups water
Best Greek Lemon Potatoes

Preheat oven to 400 degrees F
- Spice mix
- 1 tsp seasoned salt
- 1 tsp black pepper
- 1 tsp hot paprika
- 1 tsp rosemary or dried oregano
- 4 large baking potatoes, peeled, washed, cut into wedges
- oil for baking dish
- 6 large garlic cloves, chopped
- 4 tbsp butter, melted
- 1 lemon or lime, juice of
- 1 1/4 cup vegetable or chicken broth
- 1 cup grated Parmesan cheese
- 1 cup parsley leaves, stems removed
Turtle Soup

Put the turtle meat in a large saucepan with 1 teaspoon of salt, 1/4 teaspoon cayenne and the water
- 1 1/2 pound turtle meat
- 2 3/4 teaspoon salt, in all
- 3/4 teaspoon cayenne, in all
- 6 cups water
- 1 stick butter
- 1/2 cup flour
- 1 1/2 cup chopped onions
- 2 tablespoons minced shallots
- 1/4 cup chopped bell peppers
- 1/4 cup chopped celery
- 3 bay leaves
- 1/2 teaspoon dried leaf thyme
- 2 tablespoons minced garlic
- 1 cup chopped tomatoes
- 1/2 cup Worcestershire sauce
- 3 tablespoons fresh lemon juice
- 1/2 cup dry sherry
- 1/4 cup chopped parsley
- 1/2 cup chopped green onions
- 4 hard boiled eggs, finely chopped
- 2 tablespoons chopped green onions
- 2 tablespoons chopped hard boiled eggs
Creamed Corn with Bacon

In a large skillet, saute onion in butter for 3 minutes
- 1 small onion, finely chopped
- 1 tablespoon butter
- 4 cups fresh or frozen corn, thawed
- 1 cup heavy whipping cream
- 1/4 cup chicken broth
- 4 bacon strips, cooked and crumbled
- 1/4 teaspoon pepper
- 1/4 cup grated Parmesan cheese
- 2 tablespoons minced fresh parsley
Rice Balls

1) Cook 2 cups of white rice in rice cooker and set aside
- 2 cups white rice.
- 2 teaspoon saffron threads, crumbled, or teaspoon powdered saffron.
- 1 quart water.
- 2 tablespoons olive oil.
- 1/2 cup finely chopped onion.
- 1 lb. lean ground pork or beef.
- 1 teaspoon minced rosemary or 1/2 teaspoon dried rosemary, crumbled.
- 1/4 cup fresh or canned tomato sauce.

- 2 cup Parmesan cheese.
- 1-1/2 cups very fine dried bread crumbs.

JIm's Chocolate Mayonnaise Cake

Method: Preheat oven to 350˚F
- 3 cups all-purpose flour
- 1-1/2 cups sugar
- 2/3 cup unsweetened cocoa
- 2-1/4 teaspoons baking powder
- 1-1/2 t baking soda
- 1-1/2 cups mayonnaise
- 1-1/2 cups warm water
- 1-1/2 t vanilla
- 1/4 cup chocolate chips
Sous Vide Egg Bites with Cream

Set the Sous Vide machine to 172 degrees
- 12 eggs 12 eggs
- 1/2 cup cottage cheese
- 1/2 cup heavy cream
- 1 cup Gruyere or cheese of choice, grated
- 1/2 teaspoon each of salt, pepper, garlic powder and paprika (or any other spices you like)
- 1/2 teaspoon of hot sauce of choice (optional)
- 2 Tablespoons butter
- 10 slices of bacon, cooked (optional)

- 1/2 cup sugar
- 2 c. yellow cornmeal
- 6 cups flour
- 1 t salt
- 4 t baking powder
- 2 eggs

- 2 ounces cocoa powder
- 7 fluid ounces Beer
- 4 ounces very soft butter
- 10 ounces dark brown sugar
- 2 large eggs beaten
- 6 ounces plain flour
- 1/4 teaspoon baking powder
- 1 teaspoon of bicarbonate of soda
- For the icing
- 4 ounces sifted icing sugar
- 2 ounces very soft butter
- 2 tablespoons beer
- 4 ounces dark chocolate (50-55% cocoa solids)
- 1 ounce walnuts finely chopped
- To decorate
- Some shavings of your favorite chocolate for the top
