Pressure Cooker Chicken Wings

- I use a special glaze made with soy sauce, honey, molasses and spices, blended
- to give these chicken wings a beautiful dark coating when finished. You can
- serve them as either a maindish with mashed potatoes (which can be cooked at
- the same time), and a tossed salad, or use them as a great party dish served
- with a dipping sauce of Ranch dressing.
- The Sauce
- 1/2 cup soy sauce
- 1/2 cup honey
- 1/4 cup molasses
- 2 tablespoons chile sauce
- 1 teaspoon ground ginger
- 2 cloves garlic, finely chopped
- In a medium bowl, mix the sauce ingredients and set aside.

1 Whisk cider, cornstarch, mustard, honey, salt and pepper (to taste) in a bowl
- 1/2 cup apple cider
- 1 1/2 teaspoons cornstarch
- Salt
- Freshly ground black pepper
- 1 Tbsp honey
- 1 Tbsp mustard
- 2 Tbsp seasoned dry breadcrumbs
- 4 4oz chicken breasts
- 1 Tbsp olive oil
- 2 small unpeeled apples, cored and cut into eighths (use Golden delicious, Granny Smith, Jonathan, Pippin, or McIntosh apples, see cooking apples chart)
- 1/2 cup chicken broth
- Fresh parsley

N'awlins Okra Stew

- 2 Tbs vegetable oil
- 1 large purple onion, coarsely chopped
- 1 red or green bell pepper, diced
- 1 1/4 lbs fresh tomatoes, coarsely chopped
- 1 1/4 lbs fresh okra, washed, stem ends trimmed off
- 2 large cloves garlic, minced
- 1/2 tsp. Cajun seasoning
- 1/2 tsp. dried thyme leaves
- 1/2 tsp. dried oregano
- 1/2 tsp. dried marjoram
- 1/4 tsp. fennel seeds, crushed in a mortar and pestle
- 1/2 tsp. salt or to taste
- Freshly ground black pepper to taste
