Chunky Monkey Pancakes

Directions Combine flour, baking powder, baking soda, and salt in a large bowl
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup skim milk
- 3 tablespoons butter, melted
- 2 eggs
- 1 tablespoon white sugar
- 1 teaspoon vanilla extract
- 1 large banana, diced
- 1/2 cup miniature semisweet chocolate chips
- 1/4 cup chopped pecans
- cooking spray
Snappy Sausage Bites

Directions Preheat oven to 350 degrees
- 1 pkg. refrigerated won ton wrappers (usually found in produce department)
- 1 lb. ground sausage (mild or hot)
- 3 C. Monterey Jack and cheddar blend grated cheese
- 1 C. bottled ranch dressing
- 1 4-oz. can chopped green chilies
- 1 4-oz. jar sliced pimientos, drained and chopped (optional but colorful)
Flourless Chocolate Cake

Preheat the oven to 350°F (175°C)
- 1/2 cup water
- 1-1/3 cups sugar
- 8 ounces unsweetened chocolate, chopped fine
- 4 ounces semisweet chocolate, chopped fine
- 1 cup (2 sticks) unsalted butter, cut into small pieces and brought to room temperature
- 5 extra-large eggs (or 6 large eggs), at room temperature
- Whipped cream for topping
German Onion Pie

Preheat oven to 400 degrees f Saute bacon
- 4 thick slices of bacon, diced
- 2 cups peeled and chopped yellow onion
- 2 eggs, beaten
- 1 cup sour cream
- 1 tblsp flour
- 1/2 tsp salt
- 1/4 tsp fresh ground black pepper
- 1 9-inch pie shell, unbaked
Irish Stew

1 Heat olive oil in heavy large pot over medium-high heat
- 1/4 cup olive oil
- 1 1/4 pounds stew beef, cut into 1-inch pieces
- 6 large garlic cloves, minced
- 6 cups beef stock or canned beef broth
- I cup of Guinness beer
- 1 cup of fine red wine
- 2 tablespoons tomato paste
- 1 tablespoon sugar
- 1 tablespoon dried thyme
- 1 tablespoon Worcestershire sauce
- 2 bay leaves
- 2 tablespoons (1/4 stick) butter
- 3 pounds russet potatoes, peeled, cut into 1/2-inch pieces (about 7 cups)
- 1 large onion, chopped
- 2 cups 1/2-inch pieces peeled carrots
- Salt and Pepper
- 2 tablespoons chopped fresh parsley
Halibut with Apple and Lemon Butter Sauce

Apple Halibut (this recipe is for 2 servings adjust according to how many guests)
- 2 (6 to 7 ounce) fresh halibut fillets (of course adjust this to the amount of
- guests)
- Pinch of salt and pepper
- 3 tablespoons of flour
- 4 tablespoons of vegetable oil
- 3 tablespoons butter
- 3 to 4 baby red potatoes, quartered and roasted
- 3 strips smoked, diced bacon
- 1/2 cup sliced thinly red onions
- 1 medium apple, sliced into match sticks
- 1/2 cup Lemon Butter sauce (see recipe)
- 2 tablespoons chopped chives (I use green onion)
- Lemon Butter Sauce
- Yield 1 cup
- 6 ounces white wine
- 2 tablespoons freshly squeezed lemon juice
- 3 whole black peppercorns
- 1 shallot, quartered
- 1 cup heavy cream
- 6 ounces cold, unsalted butter cut into pieces
- 3 ounces cold, salted butter cut into pieces
Scalloped Potatoes and Ham

Method: Grease a 1-1/2-quart casserole dish or heatproof glass bowl
- 1/2 cup chopped onion
- 1/4 t garlic powder
- 2 T butter
- 1/4 t white pepper
- dash salt
- 1-1/4 cups half and half
- 3 medium potatoes, thinly sliced
- 1 cup ham, large dice

- 1 cup sugar
- 1 cup water
- 1 1/2 cups mashed unsweetened strawberries
Sausage, Cheese and Basil Lasagna

Directions To make sauce, heat oil in heavy large pot over medium-high heat
- Sauce:
- 2 Tbs. olive oil
- 1 lb. spicy Italian sausages, casings removed
- 1 C. chopped onion
- 3 large garlic cloves, chopped
- 2 tsp. dried oregano
- 1/4 tsp. dried crushed red pepper
- 1 28 oz. can crushed tomatoes with added puree
- 1 14 1/2 oz. can diced tomatoes with green pepper and onion, liquid reserved
- Filling:
- 1 1/2 C. (packed) fresh basil leaves
- 1 15 oz. container plus 1 C. part-skim ricotta cheese
- 1 1/2 C. (packed) grated mozzarella cheese (about 6 oz.)
- 3/4 C. grated Parmesan cheese (about 2 oz.)
- 1 large egg
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 12 no-boil lasagna noodles from 1 8 oz. package
- 3 C. (packed) grated mozzarella cheese (about 12 oz.)
- 1 C. grated Parmesan cheese (about 3 oz.)
- Nonstick olive oil spray
Vegetable Lasagna

1. Cook the lasagna noodles in a large pot of boiling water for 10 minutes, or until al dente
- 1 (16 ounce) package lasagna noodles
- 1 pound fresh mushrooms, sliced
- 3/4 cup chopped green bell pepper

- 3 cloves garlic, minced
- 2 tablespoons vegetable oil
- 2 (26 ounce) jars pasta sauce
- 1 teaspoon dried basil
- 1 (15 ounce) container part-skim ricotta
