Directions Preheat the oven to 350 degrees
- 3/4 C. milk
- 6 oz. semi-sweet chocolate, chopped
- 1 1/3 C. Guinness beer
- 1 C. (2 sticks) unsalted butter, at room temperature
- 1 1/2 C. granulated sugar
- 1/2 C. light brown sugar
- 4 lg. eggs
- 2 1/4 C. all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 pinch ground cinnamon
- 1/2 tsp. salt
- 3/4 tsp. vanilla extract
- 1 C. confectioners' sugar
- 1 Tbs. Bailey's Irish Cream
- 1 Tbs. Irish whiskey

- 1 large jicama, peeled and cut into matchsticks
- 1 red bell pepper, cut into long thin strips
- 1 green bell pepper, cut into long thin strips
- 1 small red onion, sliced into thin lengthwise slivers
- 2 green chile peppers - halved lengthwise, seeded, and cut into strips
- 1 (2 inch) piece fresh ginger root, thinly sliced
- 1 carrot, cut into matchsticks
- 1 cup water
- 2/3 cup vinegar
- 2/3 cup white sugar
- 1 teaspoon salt
Apple and Cucumber Salad

Directions Wisk together dressing ingrediants up to 2 days ahead of time (refridgerate if done ahead of time)
- Dressing:
- 2 tbsp Olive Oil
- 1 tbsp White Wine Vinegar
- .5 tbsp honey
- .5 tbsp lemon juice
- 1 tbsp unsweetened 100% juice Apple Juice
- Salt & Pepper to taste
- Salad:
- 2 Crisp Red Apples
- 1 Medium peeled seedless cucumber
Beer-Simmered Bratwurst with Onions and Red Cabbage Sauerkraut

Preheat the grill to high
- 3 large onions, peeled and thinly sliced
- 2 cloves garlic, smashed
- 3 pounds precooked bratwurst, pricked with a fork
- 6 bottles dark beer
- 2 cups water
- 1 teaspoon coriander seeds
- 1 teaspoon caraway seeds
- 1 teaspoon mustard seeds
- 1 (1-inch) piece of fresh ginger, peeled and chopped
- Hot dog buns, brown bread, or hoagie buns
- Sweet and hot German mustard, optional, for garnish
- Spicy brown mustard, optional, for garnish
- Red Cabbage Sauerkraut, recipe follows
- Pickles, optional, for garnish
- Pickled beets, optional, for garnish
- Pickled eggs, optional, for garnish
- 1/4 cup olive oil
- 2 cups red wine vinegar
- 1 cup water
- 1/4 cup granulated sugar
- 1 teaspoon whole mustard seeds
- 2 cloves garlic, peeled and thinly sliced
- 1 large head red cabbage, thinly shredded
- Salt and freshly ground pepper

- 2 c. rice
- 1 c. water

Madeira Peppercorn Sauce

This delicious sauce is made with Madeira, a fortified wine made in the Madeira Islands of Portugal
- 1/4 cup finely chopped shallot
- 1/4 cup Madeira wine
- 1/2 cup demi-glace
- 1 teaspoon drained green peppercorns in brine,
- coarsely chopped
- 1 teaspoon unsalted butter
- Salt & pepper to taste
Chile Cheese Bread

- 3 1/4 cups Bread flour
- 1 teaspoon Baking powder
- 1 teaspoon Salt
- 1 tablespoon Sugar
- 4 tablespoons SACO dry buttermilk
- 1 tablespoon Vital wheat gluten
- 1/4 cup Warm water
- 1 1/4 cups Sharp cheddar -- lg cubes

- 1 can Canned chopped green -- chilies; well-drained - or use fresh chiles
Cream Cheese Peach Pie!!

Preheat oven to 350 degrees
- 1 package of white or yellow dry cake mix
- 1/3 cup butter, room temperature
- 2 large eggs, divided
- 29 ounce can of peach slices, drained
- 8 ounces of Cream Cheese, room temperature
- 1/3 cup of sugar
- 1 teaspoon Vanilla Extract
