Beef Braciola with Noodles

1.Combine first 8 ingredients in a bowl, stir to combine, set aside 2

- 2 tbsp toasted pine nuts
- 2 tbsp lemon juice
- 1 tsp extra virgin olive oil

- 1 1/2 to 2 pounds Flank steak, trimmed
- 3 cups marinara sauce
- 1 cup dry red wine
- 1 pound fettuccine or linguine

1. Preheat oven to 425. On a rimmed baking sheet
- 1 1/2 cups panko
- 2 tbsp vegetable oil( I use safflower)
- 4 boneless Pork loin chops(6-8 ounces each)
- 3 tbsp dijon mustard

1. Preheat oven to 350. In a large mixing bowl, combine all ingredients except marinara sauce-Do not overmix

- 1/4 cup parmesan cheese

Roasted Broccoli and Carrots

1. Preheat oven to 475 Toss broccoli and carrots with olive oil, garlic and salt and pepper 2
- 1 head broccoli, cut into florets
- 8 ounces baby carrots, trimmed and cut in half
- 4 cloves garlic, minced
- 1 tsp kosher salt
- Black pepper to taste
- 1/4 cup Extra Virgin Olive oil
Chicken Enchiladas

Coat large saute pan with oil
- 3 tablespoons vegetable oil
- 1 1/2 pounds skinless boneless chicken breast
- Salt and pepper
- 2 teaspoons cumin powder
- 2 teaspoons garlic powder
- 1 teaspoon Mexican Spice Blend
- 1 red onion, chopped
- 2 cloves garlic, minced
- 1 cup canned corn
- 5 canned whole green chiles, seeded and coarsely chopped
- 4 canned chipotle chiles, seeded and minced
- 1 (28-ounce) can stewed tomatoes
- 1/2 teaspoon all-purpose flour
- 16 corn tortillas
- 1 1/2 cups enchilada sauce, canned
- 1 cup shredded Cheddar and Jack cheeses
- Garnish: chopped cilantro leaves, chopped scallions, sour cream, chopped tomatoes

- 1 large ripe banana
- 1 pinch ground cinnamon

Apple Pie Bars

1.MAKE THE CRUST Preheat the oven to 375°
- Crust
- 3 sticks unsalted butter, room temperature
- 3/4 cup sugar
- 3 cups all purpose flour
- 1/2 tsp kosher salt
- Filling
- 6 tbsp unsalted butter
- 1/2 cup light brown sugar
- 12 Granny Smith Apples,cored, peeled and thinly sliced
- 1-2 tbsp ground cinnamon
- 1/4-1/2 tsp nutmeg
- 1 cup of water if necessary
- Topping
- 3/4 cup walnuts or pecans (optional)
- 3 cups quick cooking oats
- 1 1/2 cups light brown sugar
- 2 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/2 tsp kosher salt
- 3 sticks unslated butter, cute into 1/2 inch cubes( you can also melt the butter)
