Brown Sugar Buttercream Icing

1.Combine egg whites and salt in a large bowl
- 3 large egg whites at room temperature
- 3/4 teaspoon salt
- 1 cup packed dark brown sugar
- 1/2 cup water
- 1/2 teaspoon fresh lemon juice
- 3 sticks (1 1/2 cups) unsalted butter, cut into pieces and softened
- 2 teaspoons vanilla
- Special equipment: a candy thermometer

- 1/2 cup whole milk
- 2 tbsp sugar
- 1 1/4 ounce envelope active dry yeast

1. Combine flour, paprika , salt and pepper in a quart Ziploc bag
- 1 pound Turkey Cutlets
- 1/4 cup flour
- 1 tsp paprika
- 1 tsp Kosher salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 3 tbsp butter
- 8 ounces sliced white mushrooms
- 4 green onions , chopped
- 2 tbsp dry sherry
- 1/2 tsp dried tarragon
- 1/2 tsp dried thyme
- 1/2 tsp dried crushed rosemary
- 2 tsp dried parsley
- 1/2 cup heavy cream

1.In a electric mix master, beat butter and brown sugar until smooth
- 1 1/2 cups plus 6 tbs ( 3 3/4 sticks) unsalted butter
- 3/4 cup plus 1 tbs light brown sugar
- 2 large eggs
- 3 2/3 cups all purpose flour
- 2 tbs ground cinnamon
- 1/2 tsp salt
- 1/2 tsp salt
- Granulated sugar for rolling
Chilled Chocolate Tortoni

1. Line 12 ( 2 1/2 inch) muffin pans with paper cupcake liners(foil on the outside liners) 2
- 1 8oz package Baker's semi sweet chocolate
- 2/3 cup light or dark corn syrup
- 2 cups heavy cream divided
- 1 1/2 cups broken chocolate wafer cookies( break into small pieces)
- 1 cup coarsely chopped walnuts (optional)
- chocolate sprinkles for garnish
Italian Wedding Soup

1. Preheat oven to 350 2 Prepare Meatballs
- Meatballs
- 1 pound ground chicken or turkey
- 2/3 cup Italian seasoned dry bread crumbs
- 6 cloves garlic minced
- 1/4 cup chopped fresh parsley or 1 tbsp dried parsley
- 1 tsp kosher salt
- 1/4 cup freshly grated parmesan cheese
- 1/4 cup freshly grated pecorino romano cheese
- 3 tbsp milk
- 1 large egg, lightly beaten
- freshly ground pepper to taste
- Soup
- 2 tbsp extra virgin olive oil
- 1 medium yellow onion, minced ( about 1 1/2 cups)
- 1 pound baby carrots, diced
- 4 stalks celery with leaves, diced
- 12 cups chicken stock or broth
- 2 cups dry white wine
- 1 cup small pasta- acini pepeor mini bow ties
- 5 oz baby spinach, trimmed wash and patted dry( can use 10 oz of spinanch if not using Kale)
- 5 oz baby kale, trimmed wash and patted dry
- Extra Parmesan for serving
