Potato Pancakes

Combine mashed potatoes, flour, milk, egg, onions and green peppers
- 2 c. leftover mashed potatoes
- 1/4 c. flour
- 1/4 c. milk
- 1 egg, beaten
- 1 tbsp. onion, minced
- Bacon drippings or cooking oil
- Salt & pepper to taste
Easy Salted Caramel Ice Cream

- 1 1/3 cups store-bought dulce de leche
- 1/2 teaspoon flaky sea salt, plus more for serving
- 2 cups very cold heavy cream

- 1 14 oz can artichoke hearts in water, rinsed, drained and coarsley chopped
- 4 oz cream cheese, softened
- 1/4 cup plus i tbsp parmesan cheese
- 1 tbsp fresh lemon juice
- 2 cloves garlic
- 1/8 tsp cayenne pepper
- 2 scallions sliced
- 1 10oz package frozen chopped spinach, thawed and squeezed dry
- Vegetables of your choice for dipping
Buttermilk Ranch Chicken

Combine all ingredients up to oil; marinate 45 minutes (or overnight)
- 1 cup buttermilk
- 1/2 cup mayonnaise
- 1/2 tsp. dried mustard
- 1 tbsp. chopped fresh chives
- 1/2 tsp. dried dill
- Salt and pepper
- 4 thin-cut chicken breast cutlets
- 2 tbsp. oil
Dijon Vinaigrette Dressing

1. Mix mustard,balsamic vinegar and a pinch of salt until well Blended
- 1 tablespoon Dijon Mustard
- 2-3 tablespoons Balsamic Vinegar
- 3 tablespoons extra virgin olive oil
- Salt and Pepper
Goat Cheese Ravoli

Delicious with Sage Brown Butter Sauce
- 6 oz garlic and herb goat cheese, room temperature
- 1/2 cup part-skim ricotta cheese
- 2 cloves garlic, crushed( use a garlic press)
- 1/2 tsp kosher salt
- table grind pepper to taste
- 24 square wonton wrappers
- Serve with Sage Brown Butter Sauce
Parmesan Chicken Fingers

1. Stir together buttermilk, garlic and red pepper sauce in a large bowl
- 1/3 cup Buttermilk or 1/3 cup milk with 2 tsp white vinegar
- 2 large cloves garlic,finely chopped
- 3/4 tsp hot sauce
- 1 pound boneless chicken breasts, cut into strips or boneless chicken tenderloins
- Coating
- 3/4 cup saltines( 20 saltines), crushed into crumbs
- 1 tsp paprika
- 1/2 tsp salt
- 2 tbsp parmesan cheese
Greek Salad

1. In a salad bowl, combine all ingredients
- 6 cups torn mixed salad greens or romaine lettuce
- 2 medium tomatoes, cut into wedges
- 1 small cucumber, peeled , halved lenghtwise and thinly sliced
- 1 small red onion, cut into thin wedges
- 1/2 cup pitted kalamata olives
- 1/2 cup crumbled feta cheese (about 2 oz)
- 1 recipe Greek Vinaigrette (Recipe in Salad Dressings)
- 2 cups shredded chicken or 20 medium shrimp, cleaned and sautee in oil and garlic ( This is for if you want a main dish serving)
