Peppermint Candy Cane Meringues

These cookies bake at night while you are asleep
- 4 egg whites
- 1/4 teaspoon salt
- 1/4 teaspoon cream of tartar
- 1/2 tsp peppermint extract
- 1 cup white sugar
- 4 peppermint candy canes, crushed
Roasted Brussels Sprouts

1.Preheat oven to 400 degrees
- 1 1/2 pounds Brussels sprouts, ends trimmed and yellow leaves removed, halved if large
- 3 tbsp extra virgin olive oil
- 4 cloves garlic, minced
- 1 tsp kosher salt
- 1/2 tsp table grind or freshly ground black pepper
Pate A Choux ( French Pastry dough for cream puffs, cheese puffs)

1. Preaheat the oven to 375°
- 1/3 cup water
- 4 tablespoons whole milk
- 5 1/2 tablespoons unsalted butter
- 1 teaspoon sugar
- 1 teaspoon salt
- 2/3 cup all-purpose flour
- 3 whole eggs, plus 1 egg and 1 egg yolk, lightly beaten for egg wash
- For cheese puffs, add 2 ounces (about 1/2 cup) grated Comté or Gruyère cheese
Pork Cutlet Parmigiana

1.With a meat mallet, pound pork into thin patties
- 2 lbs pork tenderloin, sliced into medallions
- 2 eggs or 1 egg and 1/4 cup egg whites
- 1 cup Italian breadcrumbs
- 1 tablespoon Italian seasoning
- 1/2 cup grated parmesan cheese
- 4 cups Marinara sauce
- 2 cups shredded mozzarella cheese or shredded mozzarella with provolone cheese
- 1/4 cup Extra Virgin Olive oil for frying, may need to add more EVO for frying
Chicken Tortilla Soup

Melt the butter in a large pot over medium heat
- 3 tablespoons butter
- 4 cloves garlic,minced
- 1 medium onion, finely chopped
- 2 tablespoons all-purpose flour
- 48 oz chicken broth
- 4 cups half-and-half
- One 10.75-ounce can cream of chicken soup
- 15.5 oz jar prepared salsa, mild or spicy
- 4 boneless, skinless chicken breasts, boiled, drained and shredded
- 2 15-ounce can black beans, drained
- 2 15-ounce can kidney beans, drained
- 2 15-ounce can whole kernel corn, drained
- 2 teaspoon ground cumin
- 1 1.27-ounce packet fajita seasoning
- 1 tsp kosher salt
- table ground pepper to taste
- 1 16-ounce bag tortilla chips (I use balck bean and garlic)
- 8 ounces Monterey Jack, grated
- 8 ounces sharp Cheddar, grated
- 1/2 cup sour cream
Pork and Sauerkraut Stew

Hearty Stew that is perfect with Spaetzle or egg noodles of your choice
- 8 garlic cloves, thinly sliced
- 4 red bell peppers, chopped
- 2 medium yellow onions, chopped
- 1 tbsp Kosher salt
- 7 pounds pork shoulder,trimmed and cut into 1 1/2-inch cubes
- 3 tablespoons extra virgin olive oil
- 4 tablespoons tomato paste
- 1/2 cup Hungarian sweet paprika
- 2 teaspoons Hungarian hot paprika
- 2 pound sauerkraut, drained
- One 750-ml bottle dry red wine
- 1 quart beef stock or broth
- 4 cups water
- 2 teaspoon dried marjoram
- 4 bay leaves
- 2 Cubanelle peppers, thinly sliced
- 1 teaspoon black pepper
- 2 tsp kosher salt
- Cooked spaetzle or egg noodles, for serving
- Crème fraîche or sour cream , for serving
Mustard Steak Au Poivre

- 1/4 to 1/2 teaspoon crushed red pepper

- 1 tablespoon fresh lemon juice
- 1 tsp Kosher salt
- Table grind pepper to taste
