Beef Braciola with Noodles

Ingredients

  • 1/2 cup Italian Bread Crumbs
  • 2 tbsp dried parsley
  • 1/3 cup grated Parmesan cheese
  • 3 tbsp capers
  • 2 tbsp toasted pine nuts
  • 2 tbsp lemon juice
  • 1 tsp extra virgin olive oil
  • 4 cloves of garlic, minced
  • 1 1/2 to 2 pounds Flank steak, trimmed
  • 3 cups marinara sauce
  • 1 cup dry red wine
  • 1 pound fettuccine or linguine

Preparation

Step 1

1.Combine first 8 ingredients in a bowl, stir to combine, set aside
2.Trim fat from steak-using a sharp knife,cut horizontally through the center of the steak, cutting to but not all the way through the outer side; open flat. Place the steak down between 2 sheets of parchment paper and flatten with a meat mallet to a even thickness.
3. Spread bread crumb mixture over steak, leaving 1/2" margin around outside edges. Roll up steak,jelly roll fashion, starting with the short side, secured at 2" intervals with cooking twine
4.Coat large dutch oven with Pam, place over medium high heat. When hot, add steak and brown on all sides.. Remove steak from pan and set aside. Add marinara sauce and red wine to pan , scrapping bottom of pan with wooden spoon to loosen brown bits, bring to a boil. Add steak to pan, cover, reduced heat to low and simmer for at least one hour until the steak is tender.
5. Remove string and cut steak into 16 pieces
6. Serve with Pasta and sauce
