Minestrone Soup w/Red & White Beans

Heat olive oil over medium heat in a medium saute pan
- 1 TB extra virgin olive oil
- 1 cup Italian turkey sausage, cut into small pieces
- 1 (5 oz) can tomato paste
- 1 cup chopped onion
- 1 cup chopped celery
- 2 TB minced garlic
- 1 cup chopped carrots
- 1 tsp dried oregano
- 1 (16 oz) can chopped canned tomatoes
- 6 cups chicken broth
- 1 can (15.5 oz) Bush's Cannellini Beans with liquid
- 1 can (16 oz) Bush's Red Kidney Beans, drained
- 2 cups zucchini cut into 1/2 inch pieces
- 2 cups baby spinach
- 1 cup cooked bowtie pasta
- 2 TB pesto
- 2 TB fresh grated Parmesan cheese
Beef Mediterranean & Vegetables

In slow cooker, place potatoes, carrots, and garlic
- 3 lb boneless chuck roast
- 8 (approx. 1 lb) new red potatoes (approx. 2 – 2 ½ inch diameter)
- ½ lb peeled baby carrots
- 4 whole cloves garlic
- 1 tsp dried rosemary leaves crushed
- 1 tsp salt
- ½ tsp pepper
- ¼ c water
- ¼ dry red wine
- 2 TB cornstarch dissolved in 2 TB water
- Chopped parsley
Strawberry Bavarian

In medium bowl sprinkle jello over boiling water; stir until completely dissolved
- 1 pkg. sugar free strawberry jello
- ½ cup boiling water
- 3 large ice cubes
- ½ cup fat free milk
- 1 packet Weight Watchers French vanilla smoothie mix
- ¾ cup thawed frozen nondairy light whipped topping
Chicken w/Stewed Tomatoes

Pour ½ c of broth into wide bowl; place flour mixture on plate
- 2 c chicken broth, divided
- ¼ c seasoned flour (flour mixed with a dash salt and pepper)
- 4 – 4 oz skinless, boneless chicken breasts
- 1 can (16 oz) stewed tomatoes
- 3 – 4 scallions, chopped
Penne with Tomato Basil Sauce

Cook pasta according to directions
- 16 oz Dreamfields Penne Rigate or Elbows (one box)
- 1 large sweet salad onion
- 2 pints ripe cherry or grape tomatoes
- 2 cloves garlic
- 1 c fresh basil leaves
- ½ tsp crushed red chili pepper, or to taste
- 2 TB extra virgin olive oil
- 2 TB chopped parsley,
- Salt, to taste
- Freshly grated Parmesan cheese for topping
Salad-Cucumber, Tomato, & Mozzarella

Instructions: Mix the balsamic vinegar, olive oil and garlic in a small bowl
- Ingredients:
- This simple salad is a version of an Italian standard. You'll find fresh, white mozzarella cheese in most delis or supermarkets — it's very different from the pale yellow, packaged mozzarella.
- 1 tbsp balsamic vinegar
- 1/2 tbsp quality extra-virgin olive oil
- 1 clove garlic, minced
- 1/2 cucumber, peeled and seeded
- 1 large Roma tomato, sliced
- 1 oz fresh mozzarella cheese
- 3 leaves fresh basil, chopped
Chicken 'n Biscuits Easy

Mix first 3 ingredients into bowl
- 2 Small cans of cream of chicken soup
- 2 cups milk
- 1 -2 cans of swanson mixing chicken
- 2 cans Pillsbury biscuits
Beer Bread

Mix all dry ingredients, then lastly add beer
- 1½ all purpose flour
- 1½ whole wheat flour
- 1/3 cup packed brown sugar
- 4½ tsp baking powder
- 1½ tsp. salt
- 1 12 oz. bottle of beer
Zucchini Bread

1. Grease bottom and 1/2" up sides of 8x4x2" loaf pan; set aside
- 1 1/2 cup flour
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp ground nutmeg
- 1 cup sugar
- 1 cup finely shredded, unpeeled zucchini
- 1/4 cup cooking oil (I use 1/4 cup apricot nectarine)
- 1 egg (I use 1/4 cup egg beaters)
- 1/4 tsp finely shredded lemon peel
- 1/2 cup chopped walnuts or pecans
- 4 TB chocolate chips
