Pumpkin Pie-Libby's Recipe

Combine ingredients in order given
- 2 eggs, lightly beaten
- 1 can (16 oz) Libby solid pack pumpkin
- 3/4 cup sugar
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground cloves
- 1 1/2 cups (12 oz) can undiluted evaporated milk
- 1 9 inch unbaked pie crust
Cake-Buttermilk Chocolate Cake

Combine the flours, sugar, cocoa and baking soda and stir to mix well
- FROSTING:
- 1 1/2 cups unbleached flour
- 1/2 cup oat flour
- 1 1/2 cups sugar
- 1/2 cup plus 1 TB cocoa powder
- 2 tsp baking soda
- 1 1/2 cups nonfat buttermilk
- 1/4 cup water
- 2 tsp vanilla extract
- 1 TB cocoa powder
- 1 cup nonfat vanilla yogurt
- 1 cup light whipped topping

- 1 can artichoke hearts, cut up
- Pine nuts

Preheat oven to 350. In a large bowl mix together all ingredients until well mixed
- ½ c sugar
- ½ c vegetable oil
- ¾ c pumpkin puree
- 2 eggs
- 1 ½ c Bisquick
- 1 tsp pumpkin pie spice
- ½ c raisins (optional)
Pasta BBQ Chili

Cook pasta according to package directions; drain and set aside
- 8 oz rotelle or wagon wheel pasta
- 1 TB oil, preferably canola
- 1 onion, chopped, about one cup
- 8 oz ground turkey breast
- 1 green pepper, coarsely chopped, about 1 ½ cups
- 1 can (11 oz) corn, drained
- 1 TB chili powder
- 1 TB dried oregano
- ½ tsp salt
- 1 can (19 oz) red kidney beans, drained and rinsed
- 1 can (8 oz) tomato sauce
- ¾ cup bottled barbecue sauce
GOLDEN CHICKEN AND AUTUMN VEGETABLES

- 4 chicken breast halves, skin removed
- 1 cup Swanson chicken broth
- 1 TB chopped fresh parsley

In blender combine 6 oz coffee, 4 oz 1 percent milk, 1 TB semisweet chocolate chips and a handful of ice
- In blender combine 6 oz coffee, 4 oz 1 percent milk, 1 TB semisweet chocolate chips and a handful of ice. Puree on high for 30 seconds. Pour into tall glass. Add a dollop of Cool Whip and a straw.

Preheat oven to 425; spray an 8x4" loaf pan with nonstick cooking spray

- 3 TB sugar
- 1 1/4 cups + 1 TB all purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1/2 cup low fat buttermilk
- 2 tsp unsalted butter, melted
- 1 tsp grated lemon zest
- 1 medium zucchini, grated and squeezed dry
