Banana Gingerbread

Ingredients
- 2 cups whole wheat flour
- 1/4 cup toasted wheat germ
- 1 tsp baking powder
- 1 tsp baking soda
- 1 1/2 tsp ground ginger
- 1 tsp ground cinnamon
- 1 1/2 cups mashed very ripe banana (about 3 large)
- 1/4 cup molasses

Step 1
Combine the flour, wheat germ, baking powder, baking soda, and spices and stir to mix well. Add the remaining ingredients, and stir just until the dry ingredients are moistened.
Coat an 8x4 inch loaf pan with nonstick cooking spray. Spread the mixture evenly in the pan and bake at 325F for 40 - 45 minutes, or until a wooded toothpick inserted in center comes out clean.
Remove the bread from the oven and let sit for 10 minutes. Invert the loaf onto a wire rack, turn right side up, and cool before slicing and serving.
