Blueberry Banana Walnut Salad

Slice a banana and mix with blueberries and walnuts
- 1 large banana
- 1/4 cup blueberries
- 1/4 cup rough chopped walnuts
- zest and juice of a lemon
- 2 c. spinach
- 1 T. olive oil
- salt and pepper
Kale Chips

This is a paleo and healthier alternative to potato chips
- 1 bunch of kale, washed, dried and removed from stems (make sure very dry before cooking)
- 4 T. olive oil
- sea salt
Almond Macaroons

- 1 - 7 oz container of almond paste, grated to break up (use unsweetened if prefered or see my recipe for unsweetened)
- 2/3 cup unsweetened, shredded coconut
- 1/4 cup egg whites (about 2 eggs)
Greek Salad

- 4 cups mixed greens
- 2 large roma tomatoes, chopped
- 1/2 cup pitted Kalmata olives
- 2 fire roasted red peppers, chopped
- 1/4 cup crumbled feta cheese
- 1/4 cup Balsamic vinaigrette
Breakfast Strata

To make it Paleo friendly, leave out bread and cheese; for lower fat leave out chorizo and use low fat cheese
- 2 whole wheat or multi-grain sandwich thins
- 5 eggs
- 1/2 cup low fat milk (coconut or almond milk for Paleo)
- 1/2 t. dried thyme
- 6 slices Canadian bacon or ham
- 3 oz cooked chorizo
- 1/2 cup shredded cheddar cheese
Chicken Apple Slaw

Mix all ingredients and let sit for atleast 30 minutes before serving to get the best taste
- 2 chicken breasts, roasted or grilled, diced
- 12 oz package of broccoli slaw
- 2 medium apples, cored and chopped
- 4 green onions, diced
- 1/4 cup orange muscat champagne vinegar (Trader Joe's) or apple cider vinegar
- 1/8 cup olive oil
- 1/8 cup toasted sesame seeds
- sea salt and pepper
Mongolian BBQ Beef

In a large pan or wok, heat oil over medium high heat
- 2 lbs beef strips for stir fry
- 2 T. sesame oil
- 2 T. chili oil
- 3 T. minced garlic
- 3 T. minced ginger
- 1 bunch of green onions, sliced
- pepper
- 2 cups nappa cabbage
- 2 cups bok choy
- 12 oz pkg broccoli cole slaw
- 1/3 cup low sodium soy sauce
- 2-4 T. Srircha hot chili sauce (optional)
Mushrooms and Veggies

Saute onions and garlic in olive oil for about 1 minute
- 2 T. olive oil
- 5-6 choppd green onions
- 2-3 cloves of garlic, minced
- 2 cups mixed dried mushrooms
- 1 cup chopped asparagas
- 1/4 cup red wine or cooking sherry
- 1/4 cup chicken broth
- 1 cup cherry tomatoes, cut in half
- 1 cup fresh spinach
- salt and pepper
- 2 t. Veggie Bombay seasoning
Triple Berry Cream Shortcakes

In a large mixing bowl, combine flour, baking powder, salt and sugar
- Shortcakes
- 4 cups flour
- 8 t. baking powder
- 1 1/2 t. salt
- 4 T. sugar
- 4 T. butter
- 1 1/2 cup milk
- 1/2 cup sour cream
- Berry Sauce
- 1 pint fresh raspberries
- 1 pint fresh blueberries
- 1 quart fresh strawberries, sliced
- 1/4 cup sugar
- 1/4 cup water
- 2 T. orange liqueur
- 2 T. cornstarch
- Cream
- 16 oz cream cheese
- 1 cup powdered sugar
- 1 t. raspberry extract
- 2 t. almond extract
- 1 t. vanilla
Zucchini Tomato Grill

Slice zucchinis, tomatoes, and onion into slices
- 2 zucchinis
- 2 roma or heirloom tomatoes
- half of a red onion
- salt and pepper to taste
- 1 T. Veggie Bombay or other veg-all type seasoning.
