21 Spice Rib Roast

I get the 21 Seasoning Salute at Trader Joe's
- 5-6 lb roast (I used bone-in rib eye)
- 2 T. 21 Savory Salute (Trader Joe's)
- 4 cloves garlic, minced
- salt and pepper
- 1 T. cumin
- 2 T. olive oil
Manchego Salad

Toss all ingredient and serve
- 3 cups arugula
- 3 T. extra virgin olive oil
- 1/4 cup marcona almonds
- 1/4 cup shaved manchego cheese (can also use parmesean)
- pinch of pepper
Pepper Sausage on a Bed of Spinach

Saute onions and garlic in olive oil over medium-high heat for about 1 minute
- 4 Chicken Sausage (I like Open Nature brand – 100% natural, no antibiotics, no preservatives), sliced or whole
- 1/2 ½ red onion, sliced
- 2 cloves of garlic, minced
- 2 T. olive oil
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- Pinch of pepper
- 1 T. Veggie Bombay (or vegg-all)
Crockpot Fajitas

Place all ingredients in a crockpot and cook on low for 6-7 hours
- 1.5 lbs chicken breast cut into strips (can also use steak strips)
- 2 bell peppers, seeded and cut into strips
- 1/2 red onion, sliced
- 5 roasted green chiles, seeded and cut into strips
- 3 cloves garlic, minced
- 1 T. fresh cilantro, chopped
- 1 can El Pato (I used the yellow can)
- 14.5 oz can diced tomatoes, drained
- 1 T. cumin
- 1/2 T. green chile powder
- 1 T. Mexican oregano (or regular oregano)
- 1 t. cinnamon
- 2 pinches sea salt
- pinch of pepper
Crockpot Spicy Ribs

Put all ingredients in a crockpot on low and cook for 6-8 hours
- 2 lbs boneless ribs (beef or pork)
- 1/2 yellow onion, sliced
- 4 cloves garlic, minced
- 1 can El Pato (I used the yellow)
- 1 sm can tomato paste
- 1/4 cup 100% maple syrup or maple agave nectar
- 1 T. cumin
- 2 t. paprika
- 2 pinches sea salt
- 2 pinches pepper
- A few shaves of a whole nutmeg
Cranberry Walnut Salad with Ginger Cranberry Vinaigrette

Mix all sald ingredients and toss with desired amount of dressing
- 2 hearts of romaine lettuce, chopped
- 1/2 cup walnuts
- 1/4 cup cranberries
- 1/4 cup goat cheese, crumbled
- Ginger Cranberry Vinaigrette (see my recipe)
Sweet Potato Hash

- 2 lbs lean ground beef or bison
- 2 medium sweet potatoes, peeled and thinly sliced
- 1/2 bunch of asparagus
- 2 medium shallots, peeled and sliced
- 2 cloves garlic, minced
- 1/8 t. nutmeg
- Sea salt and pepper to taste
Not Your Grandma's Ambrosia Salad

Mix all fruit and lemon juice
- 4 kiwis, peeled, sliced and halved
- 3 pears, chopped
- 2 avacados, chopped
- 2 mangos, chopped
- Juice of half of a lemon
- 2 handfuls of pistachios
- 2 handfuls of unsweetened coconut
Roasted Winter Soup

Paleo friendly
- 1 medium to large butternut squash
- 1 large acorn squash
- 1 med shallot, minced
- 3 cloves garlic, minced
- 1 T. olive oil
- pinch of salt and pepper
- 1 t. fresh nutmeg
- 2 t. cinnamon
- 1/2 T. fresh, chopped rosemary
- 1/2 T. fresh, chopped thyme
- 1 cup coconut milk
- 1/2 cup low sodium chicken broth (more or less depending on desired thickness)
Paleo Brownies

- 8 oz dark chocolate (70% or higher)
- 1/2 cup cane sugar (organic sugar)
- 2 eggs
- 1 t. vanilla
- 1/2 cup coconut flour
- 3/4 cup coconut oil
- pinch of sea salt
- 1/4 cup chopped pecans (optional)
