Lasagna with Zucchini "Noodles"

Leave out the cheeses and make it strict paleo
- 1 - 1 1/2 lbs of lean ground beef
- 1/2 yellow onion, chopped
- 4 cloves of garlic, minced
- 28 oz can stewed diced tomatoes (drained)
- 15 oz can tomato sauce
- 1 T. dried oregano
- 1 T. dried basil
- salt and pepper
- 5 large zucchinis, sliced thin lengthwise
- 5 large heirloom tomatoes, sliced
- 4 cups spinach
- 24 oz Ricotta cheese (for strict Paleo, leave out)
- 2 cups Walnut Asparagas Pesto (use 3 cups if you don't use ricotta) - see recipe in my Sauce cookbook
- 8 oz shredded mozzarella cheese (for strict paleo, leave out)

- 1 gala or fugi apple sliced into cubes
- 15 grapes, quartered
- Juice of 1/2 a lemon
- 1/4 to 1/2 cup sesame dressing
- Salt and pepper, to taste
Cilantro Lime Halibut

Place 1 cup of spinach on bottom of a large piece of foil
- 2 large halibut filets
- 2 limes, sliced
- Juice of a lime
- 2 t. basil
- 2 t. garlic salt
- 2 t. onion powder
- 1 t. sea salt
- 1 t. pepper
- 1 T. fresh cilantro, rough chopped
- 2 cups fresh spinach

- 1/4 cup toasted slivered almonds
- 2 cups spinach
- 2 cups mixed baby greens

- 3 tablespoons white balsamic vinegar
- 1 tablespoon sugar
- 3 tablespoon low sodium soy sauce
- 1 tablespoon fresh grated ginger

Heat olive oil in a large pan on medium high heat
- 1.5 lbs steak strips (for stir fry)
- 2 T. olive or coconut oil
- 1/2 red onion, sliced
- 2 cloves of garlic, minced
- 2 t. Mexican oregano
- 1 t. cinnamon
- salt and pepper
- 1/4-1/2 t. chili pepper flakes
- 2 t. dried cilantro
- 1 T. green chili powder
- 5.5 oz can V8 juice
- Juice of a lime
- 1 cup bella or cherry tomatoes, halved
- 6-8 lettuce leaves (or small tortillas if you perfer)
- 1 avocado, mashed

- 2 T. oil or butter
- 2 shallots, minced
- 3 cloves garlic, minced
- 1 bunch of asparagus, chopped
